Description

This crispy parmesan chicken is a simple and tasty dish, perfect for a quick weeknight meal or a Sunday brunch. I have been making this recipe for years and it is always a hit with my family. The chicken pieces are coated in a parmesan crust flavored with garlic and herbs, then baked until golden brown and crispy. The yogurt in the marinade makes the chicken incredibly tender and juicy. Serve with a green salad or roasted vegetables for a complete and balanced meal. A real treat!

Ingredients (9 ingredients)

  • 4 piece Chicken breast(s)
  • 150 g Grated Parmesan
  • 1 container Yogurt
  • 2 clove Crushed garlic
  • Thyme
  • 1 bouquet Fresh parsley
  • Olive oil
  • Salt
  • Pepper

Garlic and fresh herbs

Peel 2 cloves of garlic and place them in the Thermomix bowl. Chop the garlic for 3 Sek./Stufe 7. Then add the fresh parsley (1 bunch) and chop again 3 Sek./Stufe 5. Transfer the mixture to a salad bowl.

Preparation of the marinade

In the salad bowl containing the chopped garlic and parsley, add 3 tablespoons of olive oil, 1 pot of yogurt, thyme, salt and pepper. Mix all the ingredients well.

Marinating the chicken

Cut 4 chicken breasts into small pieces and sprinkle with a little thyme. Add the chicken pieces to the salad bowl containing the marinade. Mix well so that the chicken is well coated.

Preparation of the Parmesan

Pour 150 g of grated Parmesan into a shallow dish.

Coating the chicken

Take each piece of chicken and roll it in the grated Parmesan to coat it well. Arrange the parmesan-coated chicken pieces on an oiled dish. If you have any Parmesan left, sprinkle it over the chicken.

Baking in the oven

Preheat the oven to 200°C. Bake the dish for 15-20 minutes, no more. The preparation should show a golden color.
