Description

This revisited Hunter's Style Chicken is a rich and flavorful dish, perfect for a family dinner or an evening with friends. The chicken meat, tender and succulent, goes perfectly with the sauce of fresh cherry tomatoes and button mushrooms. The addition of shrimp and fried eggs makes this dish even more special and inviting. I often prepare it, especially in autumn, when the cherry tomatoes are at their best. Serve it with slices of toasted homemade bread to collect all the delicious sauce! A real comfort food that warms the heart.

Ingredients (14 ingredients)

  • 1.5 kg chicken in pieces
  • 500 g cherry tomatoes
  • 150 g button mushrooms
  • 6 piece eggs
  • 6 piece shrimp tails
  • 0.5 piece lemons
  • 6 slice homemade bread
  • 2 tbsp parsley
  • 200 ml dry white wine
  • flour
  • butter
  • extra virgin olive oil
  • pepper
  • fine salt

Preparation (11 steps)

Preparing the chicken

Flour 1.5 kg of chicken in pieces in a bowl, mixing with your hands. Make sure each piece is well covered in flour.

Browning the chicken

In a large pan, heat extra virgin olive oil q.b. and butter q.b. Brown the floured chicken pieces, arranging them in a single layer. Cook over medium-high heat.

Gilding the chicken

Turn the chicken pieces on all sides for 5-6 minutes, until golden brown completely. This step is essential to seal in the juices and give flavor to the meat.

Deglazing with wine

Deglaze with 200 ml of dry white wine and let the alcohol evaporate. Let it simmer for a few minutes.

Adding the cherry tomatoes

Add 500 g of cherry tomatoes cut into small pieces, a pinch of fine salt q.b. and pepper q.b. and let it cook for 5 minutes with the lid on.

Cooking the mushrooms

Remove the chicken from the pan, add 150 g of sliced button mushrooms and cook for 10 minutes, stirring occasionally.

Complete cooking the chicken

Put the pieces of meat back into the pan, then squeeze the juice of ½ lemon and pour it over the chicken. Complete with 2 tablespoons of chopped parsley and finish cooking for 1-2 minutes, then cover with the lid and remove the pan from the heat.

Cook the shrimp

Lightly sear 6 shrimp tails in a separate pan with a drizzle of extra virgin olive oil q.b., then add them to the pan with the chicken.

Toasting the bread

Toast 6 slices of homemade bread with a drizzle of extra virgin olive oil q.b. in a pan. Keep aside.

Frying the eggs

In another pan greased with extra virgin olive oil q.b., fry 6 fried eggs for about 5 minutes.

Plating

Plate the hot chicken and shrimp in their sauce, place a slice of bread next to it and place a fried egg on top.
