Description

This pressure cooker roasted chicken is a recipe I often make when I want a quick and tasty meal. The chicken is incredibly juicy and tender, with a dark, flavorful sauce thanks to the lemon, brandy, and the chicken's own juices. It's perfect for a Sunday family meal or any weekday when you don't want to spend hours in the kitchen. Plus, it's a very clean way to roast chicken, without turning on the oven! You can serve it with your favorite side dish, such as roasted potatoes or a fresh salad. A delicious and uncomplicated main course!

Ingredients (7 ingredients)

  • 1 piece Whole chicken, preferably free-range
  • 1 cucharada Extra virgin olive oil
  • 1 chorreón Brandy
  • 1 al gusto Salt
  • 1 al gusto Pepper
  • 0.5 piece Lemon
  • 1 ramita Fresh rosemary

Preparation (4 steps)

Brown the chicken

Heat a tablespoon of olive oil in a large skillet over medium-high heat. Brown the whole chicken on all sides until well golden. This step is crucial to achieve a golden finish as if it were roasted in the oven.

Prepare the chicken for the pressure cooker

Remove the browned chicken from the skillet. Cut half a lemon into quarters and put it inside the chicken along with a sprig of fresh rosemary. Season the chicken inside and out with salt and pepper. Place the chicken in the pressure cooker. Pour the juices and fat that the chicken has released in the pan into the pot. Add a splash of brandy to the pot.

Cook the chicken in the pressure cooker

Close the pressure cooker and program 20 minutes at high pressure (position 2). Once the valve starts to sound, lower the heat and maintain cooking for 20 minutes. Then, remove the pot from the heat and release the pressure before opening it.

Serve the chicken

Carefully remove the chicken from the pot, as it will be very tender. Strain the resulting sauce and degrease if desired. Serve the chicken with your favorite garnish and the sauce separately.
