Description

This criollo-style shredded chicken is a comforting and flavorful dish, perfect for enjoying with family or friends. The chicken meat, slowly cooked with aromatic vegetables, is shredded and sautéed with onion, peppers and paprika, creating an explosion of flavors. I prepare it often because it is very versatile: it can be served with white rice, pigeon peas or even as a filling for arepas or empanadas. The key is in the cooking broth, which gives it a special touch. Go ahead and try it, you will love it! The preparation is simple and the result is a delicious and nutritious dish.

Ingredients (11 ingredients)

  • 1 kilogramo Chicken
  • 2 piece Onion
  • 0.25 cucharadita Cumin
  • 2 dientes Unpeeled garlic
  • 2 cucharadas soperas Vegetable oil
  • 3 piece Criollo peppers
  • 0.5 piece Paprika or Red pepper
  • 1 rama Celery
  • 4 tazas Water
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (6 steps)

Chicken cooking

Thermomix® Setting
60 min/212°F/Speed 1 100

Place 4 cups of water in the Thermomix bowl. Add 1 medium whole onion, 2 unpeeled garlic cloves, 1 celery stalk and a pinch of salt. Introduce 1 kilogram of chicken into the bowl. Program 60 min./100°C/Stufe 1.

Strain the broth and reserve

Once the cooking is finished, remove the chicken from the bowl and let it cool. Strain the cooking broth with a strainer and reserve for later use. Clean the Thermomix bowl.

Shred the chicken

When the chicken is cool enough to handle, shred it completely with the help of two forks or with your hands. Reserve the shredded chicken.

Sauté the onion and peppers

Add 2 tablespoons of vegetable oil to the Thermomix bowl. Incorporate 1 large onion cut into thin rings, 3 chopped criollo peppers and ½ chopped paprika or red pepper. Program 8 Min./120°C/Stufe 1.

Add the chicken and broth

15 min/Varoma/Speed 2/Linkslauf Varoma Reverse

Add ¼ teaspoon of cumin, a pinch of pepper and the shredded chicken to the Thermomix bowl. Pour in the reserved broth. Program 15 Min./Varoma/Stufe 2/Linkslauf.

Correct the seasoning

Taste and correct the seasoning with salt if necessary. Serve hot.
