Description

This Macerata Style Chicken is a dish I often prepare when I want something tasty and comforting. The chicken meat, tender and succulent, goes perfectly with the lemon sauce, creating a balance of flavors that wins you over at the first taste. The preparation is simple and quick, perfect for a family dinner or a Sunday lunch. The touch of butter and chicken livers adds a rich and flavorful note, while the lemon gives freshness and vivacity. A true Italian comfort food!

Ingredients (8 ingredients)

  • 4 piece Chicken thighs and drumsticks
  • 30 g Butter
  • 2 piece Egg yolks
  • 2 tbsp Extra virgin olive oil
  • 1 piece Lemon (juice)
  • 50 g Chicken liver
  • 500 ml Vegetable broth
  • 1 pinch Salt

Preparation of the chicken

Thoroughly clean the chicken thighs and drumsticks, removing any residual feathers. Dry well with kitchen paper.

Brown the livers

Finely chop the chicken livers in the bowl: 3 Sec./Stage 7. Transfer the chopped chicken livers to a pan with butter and a drizzle of extra virgin olive oil. Brown for a few moments.

Brown the chicken

In the same pan, add the chicken pieces and brown them well on all sides for about 10 minutes, until golden brown.

Cooking the chicken

Thermomix® Setting
35 min/212°F/Speed 1 100

Transfer the browned chicken to the bowl. Add hot vegetable broth to cover the meat. Cook for 35 minutes/100°C/Stage 1.

Preparation of the sauce

Remove the chicken from the bowl and set aside. Filter the cooking liquid through a sieve.

Thicken the sauce

Thermomix® Setting
5 min/176°F/Speed 3 80

Pour the filtered cooking liquid into the clean bowl. Add the egg yolks and lemon juice. Cook for 5 Min./80°C/Stage 3, without the measuring cup, to thicken the sauce.

Plating

Arrange the chicken thighs and drumsticks on a serving dish and drizzle with the freshly prepared lemon sauce. Serve hot.
