Description

This rustic chicken with breadcrumbs and pecorino is a dish that brings me back to the flavors of traditional Italian cuisine. The crunchiness of the breadcrumbs, combined with the decisive flavor of the pecorino, envelops the pieces of chicken, making them tender and succulent. Ingredients (7 ingredients)

  • 4 piece Chicken
  • 100 g Breadcrumbs
  • 50 g Pecorino
  • 1 clove Garlic
  • 1 bunch Parsley
  • 1 q.b. Salt
  • 1 q.b. Black pepper

Preparation (9 steps)

Garlic in the bowl

A clove of peeled garlic in the bowl and chop for 3 Sec./level 7.

Brown the garlic

Add a drizzle of extra virgin olive oil to the bowl and sauté the garlic for 3 Min./120°C/level 1.

Prepare the chicken

Sing the chicken to remove any feathers. Wash, dry and cut into pieces. WARNING: This step does not take place in the Thermomix.

Brown the chicken (outside the Thermomix)

In a pan, preferably earthenware, brown the chicken pieces evenly for about 5 minutes. WARNING: This step does not take place in the Thermomix.

Prepare the filling

Clean the chicken giblets, chop them finely and set them aside. WARNING: This step does not take place in the Thermomix.

Chop breadcrumbs, pecorino and parsley

In the bowl, add the breadcrumbs, pecorino and parsley. Chop for 5 Sec./level 5.

Combine the chopped giblets

Thermomix® Setting
10 sec/Speed 3/Linkslauf Reverse

Add the chopped giblets to the mixture in the bowl, add salt and pepper. Mix for 10 Sek./level 3/Counterclockwise.

Compose the dish

Drain the chicken cooking juices from the pan and set aside. Cover the chicken with the giblet mixture and sprinkle with the chicken cooking juices. WARNING: This step does not take place in the Thermomix.

Bake

Cover with a lid or baking paper and bake at 180° for 40-45 minutes or until the meat is tender. WARNING: This step does not take place in the Thermomix.
