Description

This rustic chicken with olives is a heartwarming dish, perfect for a family dinner or with friends. The chicken meat, tender and juicy, goes perfectly with the strong flavor of the green olives and the heady scent of sage, rosemary and bay leaf. The preparation is simple and quick, ideal for those who have little time but do not want to give up taste. A dish that tastes of home and tradition, perfect to be enjoyed with a side of baked potatoes or a fresh salad. A true comfort food!

Ingredients (9 ingredients)

  • 4 piece Chicken thighs
  • 100 g Pitted green olives
  • 1 clove Garlic
  • 40 ml Extra virgin olive oil
  • 100 ml White wine
  • 2 foglie Sage
  • 1 rametto Rosemary
  • 1 foglia Bay leaf
  • Salt

Preparation (7 steps)

Initial preparation of the chicken

Carefully clean the chicken thighs, removing any excess fat and feather residues. This step is essential for a tastier and lighter final result.

Preparation of garlic and oil

Thermomix® Setting
3 min/248°F/Speed 1 120

Pour 40 ml of extra virgin olive oil into the bowl. Add 1 clove of garlic. Set 3 Min./120°C/Speed 1 to flavor the oil.

Browning the chicken (in a pan!)

Remove the garlic from the bowl and transfer the flavored oil to a large pan. Brown the chicken thighs in the hot oil until golden brown. This step is crucial to seal in the juices and give flavor to the meat.

Deglazing with white wine

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Pour 100 ml of white wine into the bowl. Set 3 Min./Varoma/Speed 1 without the measuring cup to evaporate the alcohol.

Cooking the chicken with aromas

Thermomix® Setting
40 min/212°F/Linkslauf Speed 1 100 Reverse

Transfer the browned chicken thighs to the bowl. Add 2 sage leaves, 1 sprig of rosemary, 1 bay leaf and salt to taste. Set 40 Min./100°C/Reverse blade Speed 1 to cook the chicken gently.

Adding the olives

2 min/212°F/Linkslauf Speed 1 100 Reverse

Add 100 g of pitted green olives to the bowl. Set 2 Min./100°C/Reverse blade Speed 1 to flavor everything.

Transfer the chicken cacciatora in white to a serving dish and serve hot.
