Description

This rustic chicken with rosemary potatoes is a simple and flavorful dish, perfect for a family dinner. The chicken meat, browned in a pan and then cooked slowly with the potatoes, becomes tender and juicy, while the fresh rosemary gives an irresistible aroma. I often prepare it when I have little time but want something tasty and comforting. The potatoes absorb all the flavors of the chicken and white wine, creating a delicious side dish. A unique dish that everyone will like, easy to prepare and full of flavor. Ideal to enjoy hot, perhaps accompanied by a good glass of red wine.

Ingredients (7 ingredients)

  • 1.2 kg chicken in pieces
  • 1.2 kg potatoes
  • 0.5 bicchiere white wine
  • 4 clove garlic
  • fresh rosemary
  • extra virgin olive oil
  • fine salt

Preparation of the ingredients

Peel the potatoes and cut them into pieces of about 3-4 cm. Peel the garlic cloves. Prepare the sprigs of fresh rosemary.

Brown the chicken

In a large pan, heat a drizzle of extra virgin olive oil over medium-high heat. Add the chicken pieces (about 1.2 kg) and brown them well on all sides, trying not to overlap them. Add two whole and unpeeled garlic cloves and a few sprigs of fresh rosemary.

Deglaze with wine

When the chicken is well browned, deglaze with ½ glass of white wine. Let the alcohol evaporate for a few minutes.

Cooking the potatoes and chicken

Add the potatoes in pieces (1.2 kg) to the pan with the chicken. Add salt to taste. Close with the lid and cook over low heat for about 30 minutes, stirring occasionally, until the potatoes are tender and the chicken is cooked.

Serve

Serve the chicken and potatoes hot, garnishing with more fresh rosemary and a drizzle of extra virgin olive oil.
