Description

  • 1 kg beef meat
  • 1 piece onions
  • 1 piece carrots
  • 1 gambo of celery
  • 2 foglie bay leaves
  • 3 bacche of juniper
  • 750 ml red wine
  • 1 clove garlic
  • olive oil
  • rosemary
  • fine salt

Preparation (9 steps)

Prepare vegetables

Peel and quarter the onion. Peel the carrot and cut into coarse pieces. Wash the celery stalk and cut into pieces as well.

Chop vegetables

Put onion, carrot and celery in the mixing bowl and chop for 5 sec./speed 5. Push down with the spatula.

Sauté vegetables

Add olive oil and sauté for 3 min./120°C/speed 1.

Sear meat

Sear the meat on all sides in a separate pan with a little olive oil, then remove from the pan and set aside.

Add flavors

Peel the garlic and put it in the mixing bowl. Chop for 3 sec./speed 7. Add bay leaves, juniper berries and rosemary.

Deglaze with red wine

Thermomix® Setting
5 min/212°F/Speed 1 100

Pour the red wine into the mixing bowl and let it reduce for 5 min./100°C/speed 1 without the measuring cup.

Add meat and simmer

60 min/203°F/Linkslauf Speed 1 95 Reverse

Add the seared meat to the mixing bowl, season with salt and simmer for 60 min./95°C/reverse direction speed 1.

Reduce sauce (optional)

Thermomix® Setting
10 min/Varoma/Speed 2 Varoma

After the cooking time, remove the meat from the mixing bowl and keep warm. Reduce the sauce in the mixing bowl for another 10 min./Varoma/speed 2 without the measuring cup, if desired.

Serve

Slice the meat and serve with the sauce. Polenta, mashed potatoes or bread are a good accompaniment.
