Description

These vegan walnut balls in tomato sauce are a hearty and satisfying dish, perfect for colder days. The combination of walnuts, lentils and spices makes the balls particularly aromatic. I like to make them when I want to cook something hearty and vegan. The preparation is a bit more complex, but the result is worth it! The tomato sauce rounds off the dish perfectly. Served with pasta or rice, it makes a great main course. The balls can also be prepared well in advance and frozen.

Ingredients (16 ingredients)

  • 2 piece Onions
  • 3 tbsp Rapeseed oil
  • 1 piece Bay leaf
  • 100 ml Vegetable stock
  • 500 ml sieved Tomatoes
  • to taste Salt
  • to taste Pepper
  • 100 g red Lentils
  • 120 g Walnuts
  • 1 tsp Cumin
  • 50 g Tomato paste
  • 2 tbsp Soy sauce
  • 70 g Breadcrumbs
  • 1 tsp Mustard
  • 1 tsp Sweet paprika powder
  • 5 g Basil

Preparation (9 steps)

Prepare and sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Peel and quarter 1 onion and place in the mixing bowl. Chop for 3 sec./level 5. Push down with the spatula. Add 3 tbsp rapeseed oil and 1 bay leaf and sauté for 3 min./120°C/level 1.

Prepare tomato sauce

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 100 ml vegetable stock and 500 ml sieved tomatoes. Season with salt and pepper. Simmer for 20 min./100°C/level 1.

Cook lentils

Prepare 100 g red lentils according to package instructions in a separate saucepan.

Chop walnuts

Thermomix® Setting
5 sec/Speed 5

Place 120 g walnuts in the mixing bowl and chop for 5 sec./level 5. Transfer.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Puree lentils

Thermomix® Setting
10 sec/Speed 8

Add the cooked lentils to the mixing bowl and puree for 10 sec./level 8.

Prepare meatball mixture

Place the pureed lentils with the chopped walnuts, the sautéed onion, 50 g tomato paste, 2 tbsp soy sauce, 70 g breadcrumbs, 1 tsp mustard and 1 tsp sweet paprika powder in a bowl and mix well. If necessary, add some water until the mixture is malleable.

Form and fry meatballs

Form small balls from the mixture with moist hands. Heat 1 tbsp rapeseed oil in a pan and fry the balls from all sides until golden brown.

Refine tomato sauce

Thermomix® Setting
5 sec/Speed 2 Reverse

Wash and chop 5 g basil and stir into the tomato sauce in the mixing bowl. 5 sec./level 2 reverse.

These hearty walnut balls in tomato sauce are a creation that arose from the desire for a filling, vegan dish that would also bring joy on cold days. I still remember well how I was looking for a recipe on a stormy autumn evening that should be both nutritious and tasty. The combination of walnuts, lentils and an aromatic tomato sauce has since become one of my favorite dishes. The ingredients play a crucial role. The walnuts give the balls a nutty flavor and a pleasant texture. Red lentils serve as a base and provide a good binding and a slightly sweet note. Cumin, paprika powder and mustard bring spice and depth to the aroma. The tomato sauce, refined with basil, rounds off the dish with its fruity acidity. When preparing in the Thermomix®, it is important to finely chop the onions so that they can be easily incorporated into the mixture. Be careful not to cook the lentils for too long, as they will become too soft and the balls could lose their shape. The walnuts should not be chopped too finely so that they still retain a certain texture. When forming the balls, it helps to moisten your hands slightly so that the mixture does not stick. For a vegetarian version, you can add some grated Parmesan or Pecorino to the ball mixture. If you like it spicier, you can add some chili or cayenne pepper. Instead of basil, you can also use other herbs such as oregano or thyme. Serve the walnut balls in tomato sauce with pasta, rice or mashed potatoes. A fresh salad or steamed vegetables goes well with this. The balls are also ideal as a filling for wraps or pita breads. The finished balls can be stored in the refrigerator and eaten within 2-3 days. They can also be frozen well. To reheat, you can either heat them in the microwave or simmer them in the tomato sauce. The tomato sauce can also be frozen separately. So you always have a quick and delicious meal at hand.
