Description

This chicken dish is a delightful way to bring a taste of summer to your table, no matter the season. The juicy cherry tomatoes burst with flavor, complemented by the rich pesto and creamy crème fraîche. It's a simple yet satisfying meal that's ready in under 30 minutes. I love serving this over a bed of spinach for a light and healthy dinner. Feel free to add a sprinkle of parmesan cheese for an extra touch of flavor. It's a family favorite!

Ingredients (5 ingredients)

  • 1 tbsp olive oil
  • 4 piece boneless skinless chicken breasts
  • 200 g pack cherry tomatoes
  • 3 tbsp pesto
  • 3 tbsp crème fraîche

Preparation (4 steps)

Sauté Chicken

Heat the olive oil in a frying pan, preferably non-stick. Add the chicken breasts and fry without moving until they take on a bit of color. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.

Sauté Tomatoes

Add the cherry tomatoes to the frying pan and cook for 3 minutes at 120°C on speed 1.

Add Pesto and Crème Fraîche

Add the pesto and crème fraîche to the frying pan with the tomatoes. Cook for 2 minutes at 90°C on speed 2.

Serve the tomato and pesto sauce over the cooked chicken.
