Description

This creamy tomato chicken is a family favorite! I've been making it for years, and it's always a hit. The sun-dried tomatoes add a wonderful depth of flavor, and the creamy sauce is just divine. It's perfect for a weeknight dinner, but also elegant enough for a special occasion. Serve it with pasta or rice for a complete meal. This dish is hearty, flavorful, and surprisingly easy to make. It's a great way to use up those sun-dried tomatoes you have in the pantry. Enjoy!

Ingredients (11 ingredients)

  • 30 g plain flour
  • 4 piece chicken breasts
  • 125 g sundried tomatoes
  • 1 piece red onion
  • 3 clove garlic cloves
  • 1 tsp chilli flakes
  • 3 sprigs thyme or oregano sprigs
  • 150 ml double cream
  • 250 ml chicken stock
  • 35 g parmesan
  • 10 piece basil leaves

Preparation (6 steps)

Prepare chicken

Place 30g flour on a plate and season with salt and pepper. Coat 4 chicken breasts in the flour mixture and set aside.

Sauté onion and garlic

Add 1 red onion, quartered, to the mixing bowl and chop for 3 sec/Stufe 5. Add 2 tbsp sundried tomato oil and sauté for 3 min/120°C/Stufe 1.

Add garlic and tomatoes

1 min/248°F/Speed 1 120

Add 3 garlic cloves to the mixing bowl and chop for 3 sec/Stufe 7. Add 125g sundried tomatoes, ½ - 1 tsp chilli flakes, and 2-3 thyme or oregano sprigs. Cook for 1 min/120°C/Stufe 1.

Add cream and stock

20 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 250ml chicken stock and 150ml double cream to the mixing bowl. Season with salt and pepper. Cook for 20 min/100°C/Stufe 1/Linkslauf.

Add chicken and parmesan

Thermomix® Setting
1 min/140°F/Speed 1/Linkslauf 60 Reverse

Place the chicken breasts into the mixing bowl. Cook for 10 min/100°C/Stufe 1/Linkslauf. Add 35g parmesan and cook for 1 min/60°C/Stufe 1/Linkslauf.

Finishing touches

Stir in 8-10 basil leaves, roughly chopped. Serve immediately.
