Description

This dish of Provençal-style chicken cutlets is a real ray of sunshine on the plate! I often prepare it in the summer, when the sun-drenched vegetables are at their peak. The cherry tomatoes burst with flavor, the red peppers add a sweet touch and the zucchini a melting texture. Fresh basil delicately perfumes the whole. It is a simple, quick to prepare dish full of Mediterranean flavors. Ideal for a sunny lunch or a light dinner. A real treat for the taste buds!

Ingredients (11 ingredients)

  • 4 piece chicken cutlets
  • Olive oil
  • 1 piece onion
  • 1 piece red pepper
  • 1 piece zucchini
  • 2 clove garlic
  • 200 g cherry tomatoes
  • 0.25 piece candied lemon (optional)
  • 12 feuilles basil
  • Espelette pepper
  • Salt or fine salt

Preparation (9 steps)

Preparation of vegetables

Cut the cherry tomatoes in half. Cut the red pepper into thin strips. Slice the onion into thin strips. Cut the zucchini into strips. Reserve all the vegetables.

Seasoning the chicken

Season the chicken cutlets with salt on both sides.

Cooking the chicken in the pan

Heat a drizzle of olive oil in a pan. Brown the chicken cutlets for 3 minutes on each side. Set the chicken cutlets aside on a plate.

Preparation of the aromatic base

Sauté the onion

Add a drizzle of olive oil and sauté 3 min/120°C/speed 1.

Adding the peppers

Add the red peppers cut into strips to the Thermomix bowl. Set 2 minutes/100°C/speed 1.

Cooking the vegetables

Add the zucchini cut into strips, the cherry tomatoes cut in half, the quarter of candied lemon (optional) and the grated garlic cloves to the Thermomix bowl. Add Espelette pepper and a little salt. Set 5 minutes/100°C/speed 1.

Reintegration of chicken

Add the chicken cutlets to the Thermomix bowl and let them warm up 1 minute/100°C/Reverse Rotation speed 1 in the garnish.

Adding basil and serving

At the end of cooking, add the chopped fresh basil leaves to the Thermomix bowl and mix gently 10 Sec./Speed 1/Reverse Rotation. Serve immediately.
