Description

This dish of chicken fillets with cream and tomato, accompanied by a fragrant pilaf rice, is a real treat for the whole family. I often prepare it on Sundays because it is both simple and tasty. The pilaf rice, baked in the oven, is incredibly soft and fragrant thanks to the curry. The chicken fillets, tender and coated in a creamy tomato sauce, literally melt in the mouth. A comforting and easy dish to make with the Thermomix®, perfect for convivial meals and winter evenings. Feel free to add a pinch of chili to enhance the taste!

Ingredients (13 ingredients)

  • 4 piece chicken fillets
  • 1 can crushed peeled tomato
  • 10 cl liquid cream
  • 1 clove garlic
  • 2 c. à c. paprika
  • 0.5 bouquet flat parsley
  • 300 g basmati rice
  • 45 cl hot vegetable stock
  • 1 c. à c. curry powder
  • 1 c. à c. salt
  • 1 piece onion
  • Olive oil
  • 20 g butter

Preparation (10 steps)

Preparation of chicken fillets

Put the chicken fillets in a bowl. Add 1 tablespoon of olive oil and 2 teaspoons of paprika. Mix well to coat the fillets.

Preparation of pilaf rice

Peel and cut the onion in half. Put the onion in the Thermomix bowl and chop 3 sec/Stufe 5.

Cooking the pilaf rice

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tablespoons of olive oil to the Thermomix bowl. Sauté the onion 3 Min./120°C/Stufe 1.

Adding rice and stock

Thermomix® Setting
1 min/Speed 2/Linkslauf Reverse

Add 300 g of basmati rice and 1 teaspoon of curry powder to the Thermomix bowl. Mix 1 Min./Stufe 2/Linkslauf.

Cooking the rice in the oven

Transfer the rice-onion mixture to a cast iron casserole dish. Add 45 cl of hot vegetable stock and 1 teaspoon of salt. Cover and bake in a preheated oven at 180°C for 18 minutes.

Cooking the chicken fillets

Meanwhile, heat a frying pan without fat. Add the chicken fillets and brown them on each side for 2 minutes. Place the chicken fillets on a plate.

Preparing the tomato sauce

Put the can of crushed peeled tomato in the Thermomix bowl. Add 1 peeled and grated clove of garlic. Heat 3 Min./100°C/Stufe 1.

Finalizing the sauce and cooking the chicken

2 min/194°F/Speed 1 90

Add 10 cl of liquid cream and salt to the Thermomix bowl. Mix 2 Min./90°C/Stufe 1.

Final cooking of the chicken in the sauce

Thermomix® Setting
12 min/194°F/Speed 1/Linkslauf 90 Reverse

Add the chicken fillets to the Thermomix bowl and cook 12 Min./90°C/Stufe 1/Linkslauf. Turn the fillets halfway through cooking.

Finish the pilaf rice

Check the rice is cooked. If it is cooked, add 20 g of butter cut into pieces on the surface of the rice, close the casserole dish and let it rest out of the oven for 5 minutes. Mix with a fork and serve with the chicken.
