Description

This rustic rye spelt bread is an absolute delight! I bake it often because it is so easy to prepare and tastes wonderful. The combination of rye and spelt flour gives it a hearty flavor, which is enhanced by the addition of seeds. It is perfect for a hearty breakfast or as a side dish to soups and salads. Especially in autumn, when it gets colder outside, I love the smell of freshly baked bread in the house. Vary the seeds as you like - sunflower seeds, pumpkin seeds or flax seeds are a great fit. The bread keeps well and tastes delicious even the next day!

Ingredients (9 ingredients)

  • 400 g Spelt flour
  • 400 g Wholemeal rye flour
  • 700 ml Lukewarm water, approx. 37 °C
  • 1 cube Yeast
  • 1 tbsp Salt
  • 1 tsp Sugar
  • 1 tbsp Fruit vinegar
  • 1 tbsp Honey or Oil or Syrup
  • 1000 n. B. Seeds of your choice, up to 1 kg including flour

Prepare yeast

Put 700 ml of lukewarm water (approx. 37°C), 1 cube of yeast, 1 tsp of sugar and 1 tbsp of salt into the mixing bowl and stir for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add 400 g spelt flour, 400 g wholemeal rye flour, 1 tbsp fruit vinegar and 1 tbsp honey or oil or syrup to the mixing bowl. If you like, add seeds of your choice (up to 200 g). Knead everything for 3 min./kneading setting to form a dough.

Fill dough into mold

Place the dough in a well-greased loaf tin (approx. 25 cm) and spread evenly.

Bake bread

Preheat the oven to 190°C top/bottom heat. Place the loaf tin in the preheated oven and bake the bread for approx. 75 minutes.

Let bread cool down

Remove the finished bread from the mold immediately and let it cool completely on a wire rack.
