Description

This Catalan style chicken stew is a traditional recipe that evokes memories of grandmother's cooking. The chicken, juicy and tender, is slowly cooked in a rich and tasty sauce made with onion, garlic, carrot and white wine. The prunes give it a sweet and special touch that makes it a perfect dish for special occasions such as Christmas. The key is in the stir-fry, which should be cooked over low heat until the onion is well poached and caramelized. A comforting and flavorful dish that everyone is sure to love!

Ingredients (12 ingredients)

  • 1 piece chopped chicken
  • 2 piece large onions
  • 4 clove garlic
  • 1 piece carrot
  • 1 container white wine
  • 1 tbsp flour
  • 1 hoja bay leaf
  • 10 piece prunes
  • 1 chorro brandy o cognac
  • extra virgin olive oil
  • salt
  • pepper

Preparation (8 steps)

Prepare and brown the chicken

Salt and pepper the chopped chicken to taste. In a large frying pan, heat extra virgin olive oil over medium-high heat. Brown the chicken on all sides until golden. Remove the chicken from the pan and set aside.

Prepare the stir-fry

In the Thermomix bowl, add 2 large onions cut into quarters, 4 cloves of garlic and 1 carrot in slices. Program 5 seconds/speed 5. Lower the remains from the walls of the bowl with the spatula.

Sauté the vegetables

10 min/248°F/Speed 1 120

Add extra virgin olive oil to the Thermomix bowl. Program 10 minutes/120°C/speed 1.

Incorporate the chicken and the flour

Thermomix® Setting
2 min/248°F/Speed 1 120

Add the browned chicken to the Thermomix bowl. Add 1 dessertspoon of flour. Program 2 minutes/120°C/speed 1.

Add the wine and the brandy

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Pour 1 glass of white wine and 1 splash of brandy o cognac to the Thermomix bowl. Program 3 minutes/Varoma/speed 1, without the measuring cup, to evaporate the alcohol.

Cook the chicken over low heat

45 min/212°F/Speed cuchara/Linkslauf 100 Reverse

Add 1 bay leaf and water or broth to partially cover the chicken. Program 45 minutes/100°C/spoon speed/left turn.

Add the prunes

15 min/212°F/Speed cuchara/Linkslauf 100 Reverse

Add 10 prunes to the Thermomix bowl. Program 15 minutes/100°C/spoon speed/left turn.

Reduce the sauce

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Remove the measuring cup and program 10 minutes/Varoma/speed 1 to reduce the sauce. Correct salt and pepper to taste.
