Description

This Soy Bolognese is a delicious and simple vegan alternative to classic Bolognese ragout. I often make it when I feel like pasta but want something lighter than meat. The soy granules are prepared with an aromatic soffritto base, rich tomato sauce, and a splash of red wine. It is a hearty, satisfying dish that is perfect for a quick weeknight dinner or a leisurely weekend lunch. It takes about 75 minutes to prepare, but most of that time the ragout simmers away, developing its full flavor. Served with your favorite pasta and fresh basil - simply delicious!

Ingredients (10 ingredients)

  • 320 g pasta
  • 150 g dehydrated granulated soy
  • 600 ml tomato sauce
  • 150 g mix for sauté
  • 180 ml red wine
  • 40 g tomato paste
  • 200 ml water
  • olive oil
  • fine salt
  • basil

Preparation (10 steps)

Rehydrate soy

Place 150 g of dehydrated granulated soy in a spacious bowl, cover with hot water and rehydrate for 15 minutes.

Prepare mix for sauté

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 150 g of mix for sauté in the Mixtopf and chop for 5 Sec./Stufe 5. Add 20 ml of olive oil and sauté for 3 Min./120°C/Stufe 1.

Squeeze soy

Squeeze the rehydrated soy using a colander to eliminate as much water as possible. We recommend doing this operation taking little soy at a time, so as to be able to squeeze it well.

Add soy

Pour the squeezed soy into the Mixtopf and mix well.

Sauté wine

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Pour in 180 ml of red wine and evaporate for 3 Min./Varoma/Stufe 1 without the measuring cup.

Add concentrate

Thermomix® Setting
10 sec/Speed 3

Add 40 g of tomato paste and mix.

Add sauce and water

Thermomix® Setting
10 sec/Speed 3

Add 600 ml of tomato sauce, 200 ml of water, fine salt to taste and chopped basil to taste and mix.

Cook ragout

Thermomix® Setting
45 min/203°F/Speed 1 Linkslauf 95 Reverse

Cook for 45 Min./95°C/Stufe 1 Reverse with lid, stirring occasionally. The ragout is ready when it is well reduced.

Boil pasta

Separately, boil 320 g of pasta in salted water, then dip in the sauce and mix well.

Serve

The pasta with soy ragout is ready, use some basil leaves to garnish it and serve!
