Description

This watermelon gazpacho is an explosion of summery flavor. I have been preparing it for years and it is always a success, especially on hot days. The watermelon gives it a natural sweetness that balances perfectly with the acidic touch of the vinegar and the freshness of the pepper. It is a vegan, gluten-free and lactose-free option, ideal for everyone. In addition, it is prepared in the blink of an eye with the Thermomix® and can be ready in advance. A refreshing and healthy starter that cannot be missing from your table this summer! You can add some cucumber pieces for an extra of freshness.

Ingredients (6 ingredients)

  • 1 kilogramo Watermelon without rind
  • 1 piece Small red pepper
  • 1 clove Garlic
  • 2 tbsp Wine vinegar
  • 2 tsp Salt
  • 3 tbsp Olive oil

Preparation (5 steps)

Preparation of the ingredients

Remove the rind from the watermelon and weigh 1 kg of pulp. Cut the watermelon into cubes. Wash the small red pepper, dry it, cut it into strips and then into smaller pieces. Peel the garlic clove and remove the inner germ.

Crush the ingredients

Place the watermelon pieces, the chopped pepper and the garlic clove in the Thermomix glass. Add 2 tablespoons of wine vinegar, 2 dessert spoons of salt and 3 tablespoons of olive oil.

Crush until obtaining a homogeneous texture

Close the Thermomix glass and crush for 1 Min./Stufe 10 until obtaining a homogeneous texture without lumps. With the spatula, lower the remains of the walls of the glass and crush 30 seg./Stufe 8.

Adjust the flavor

10 seg./Speed 4

Open the lid and taste the gazpacho. Correct if necessary with salt, oil or vinegar. Crush 10 seg./Stufe 4 to mix the added ingredients well.

Cool and serve

Pour the watermelon gazpacho into a large jug and refrigerate for at least 3 hours until it is very cold. Serve in bowls and decorate with pieces of chopped pepper or serrano ham (optional).
