Description

This cold tomato soup is a real eye-catcher and tastes wonderfully refreshing on hot days! The combination of sweet melon, creamy mozzarella and aromatic tomato is simply unbeatable. I especially like to make this soup in the summer when the melons are nice and juicy. The preparation is super easy and quick, so it's perfect for a light lunch or as an appetizer for grilling. The melon-mozzarella skewers are not only delicious, but also a real eye-catcher. A great vegetarian dish that is guaranteed to please everyone!

Ingredients (12 ingredients)

  • 150 g Mini mozzarella
  • 1 piece Honeydew melon
  • 2 Stiele Basil
  • 1 tbsp Olive oil
  • 3 tbsp Lemon juice
  • to taste Salt
  • to taste Pepper
  • 1 piece Onion
  • 1 clove Clove of garlic
  • 425 ml Tomatoes (canned)
  • 1 tsp Tomato paste
  • to taste Sugar

Preparation (8 steps)

Prepare mozzarella and melon

Drain 150 g mini mozzarella. Quarter 1 honeydew melon lengthwise and remove the seeds. First cut the pulp from the peel, then into bite-sized pieces. Set aside about 18 pieces of melon.

Chop basil

Thermomix® Setting
3 sec/Speed 8

Wash 2 sprigs of basil, shake dry and put the leaves in the mixing bowl. Chop for 3 sec./level 8. Transfer.

Prepare melon-mozzarella marinade

Mix the drained mozzarella and approx. 18 pieces of melon with the chopped basil, 1 tbsp olive oil, 1 tbsp lemon juice, a little salt and pepper in a bowl. Leave to infuse for approx. 10 minutes.

Chop onion and garlic

Thermomix® Setting
3 sec/Speed 5

Peel 1 onion and 1 clove of garlic and place in the mixing bowl. Chop for 3 sec./level 5.

Puree tomato soup

Thermomix® Setting
30 sec/Speed 10

Add 1 can (425 ml) of tomatoes with juice, 1–2 tsp of tomato paste, the remaining melon and 2 tbsp of lemon juice to the onions and garlic in the mixing bowl. Puree for 30 sec./level 10.

Season tomato soup

Season the pureed tomato soup with salt, pepper and a little sugar. Transfer to a bowl and chill until serving.

Prepare melon-mozzarella skewers

Thread the marinated melon pieces and mozzarella alternately onto wooden skewers.

Arrange

Arrange the cold tomato soup in glasses and serve with the melon-mozzarella skewers.
