Description

This pistachio apricot mousse is a light and fruity dessert, perfect for hot summer days. I often prepare it for a Sunday brunch or a dinner with friends. The sweetness of the apricots goes wonderfully with the crunchiness of the pistachios and the freshness of the lemon. It's a simple dessert to make, but it always makes a small impression. Preparation only takes a few minutes, but you have to allow cooling time in the refrigerator for the mousse to take on a nice consistency. Feel free to vary the pleasures by replacing the pistachios with slivered almonds or grated coconut. A real delight!

Ingredients (5 ingredients)

  • 20 cl Milk
  • 0.5 piece Lemon juice
  • 250 can Apricots in syrup(s)
  • 60 g Powdered sugar
  • 2 c. à soupe Coconut(s)

Preparation (6 steps)

Milk preparation

Pour 20 cl of milk into a container and place in the freezer for 15 minutes or in the refrigerator for 30 minutes. This step is crucial to obtain a firm mousse.

Whip the milk into a mousse

Thermomix® Setting
2 min/Speed 3, 30 sec/Speed 2

Pour the cooled milk into the Thermomix bowl. Insert the whisk. Whip the milk into a mousse for 2 minutes / Stufe 3. Add 0.5 lemon juice and mix for 30 seconds / Stufe 2.

Preparation of the apricot puree

Thermomix® Setting
20 sec/Speed 8

Pour 250 g of drained apricots in syrup and 60 g of powdered sugar into the Thermomix bowl. Mix for 20 seconds / Stufe 8.

Incorporation of milk mousse

Pour the apricot puree into a salad bowl. Gently incorporate the milk mousse into the apricot puree using a spatula.

Cooling

Pour the preparation into individual cups. Let it set in the refrigerator for at least 1 hour.

Decoration and service

Sprinkle with 2 tbsp of coconut or crushed pistachios before serving.
