A classic rhubarb cake with meringue topping.

Ingredients (12 ingredients)

  • 1.5 kg Rhubarb
  • 175 g Margarine
  • 375 g Sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 4 piece Egg yolk
  • 300 g Flour
  • 3 Teel. Baking powder
  • 5 EB1. Cream
  • 200 g Sugar
  • 4 piece Egg white
  • 50 g Coconut flakes

Preparation (10 steps)

Prepare rhubarb

Clean, wash and cut the rhubarb into pieces about 3 cm long. Set aside.

Prepare dough

Put margarine, sugar and vanilla sugar in the mixing bowl and stir for 3 min./speed 4.

Add egg yolks

Add egg yolks and salt and stir for 1 min./speed 3.

Mix flour and baking powder

2 min/Kneading speed

Mix flour and baking powder, add to the mixing bowl together with the cream and process into a dough for 2 min./kneading level.

Spread and top the dough

Spread the dough on a baking sheet (30 x 40 cm) lined with baking paper and top with rhubarb.

Pre-bake

Pre-bake in a preheated oven at 175°C for about 20 minutes.

Prepare meringue

Put egg white in the mixing bowl and whisk with the butterfly for 3 min./speed 3.5 until stiff.

Add sugar

Fold in coconut flakes

Pipe on meringue and bake

Pipe the meringue mixture onto the pre-baked cake with a piping bag and bake for another 15 - 20 minutes.
