Description

These lemon curd squares are an absolute delight! The shortcrust pastry base, combined with the creamy curd filling and the fruity lemon flavor, makes them an irresistible cake for any occasion. I particularly like baking them in the spring, when the lemons spread their fresh scent. The preparation is a bit more complex, but the result is worth it. Perfect for Sunday coffee or as a sweet surprise for friends and family. A tip: Let the squares cool down well before cutting them, then they are easier to cut and taste even more aromatic!

Ingredients (14 ingredients)

  • 500 g Wheat flour Type 405
  • 0.5 tsp Baking powder
  • 270 g Sugar
  • 1 Prise(n) Salt
  • 250 g Butter (cold, diced)
  • Flour for the work surface
  • Fat for the baking sheet
  • 1 Lemon
  • 250 g Lemon Curd
  • 3 Pck. Vanilla sugar
  • 1000 g Low-fat curd cheese
  • 400 g Sour cream
  • 100 ml Milk
  • 4 piece Eggs (M)

Preparation (8 steps)

Prepare shortcrust pastry

Thermomix® Setting

Put 400 g flour, baking powder, 120 g sugar, 1 pinch of salt and 250 g cold, diced butter into the mixing bowl. Add 2-3 tbsp water and process for 2 min./kneading stage to a smooth shortcrust pastry.

Roll out and pre-bake dough

Halve the dough and roll out on a floured work surface to two rectangles (30 x 15 cm). Place side by side on a greased baking sheet (40 x 30 cm) and roll out to the size of the sheet. Bake in a preheated oven at 160 °C fan (180 °C top/bottom heat) for 12-15 minutes.

Prepare lemon zest

Wash the lemon, dry it and grate the peel with a zester. Set the zest aside.

Squeeze lemon juice and mix with Lemon Curd

Halve the lemon and squeeze out the juice. Mix the lemon juice with the Lemon Curd and set aside.

Prepare curd mixture

Put 100 g flour, 150 g sugar and vanilla sugar into the mixing bowl and mix for 10 sec./speed 4.

Complete curd mixture

Add curd, sour cream, milk, eggs and lemon zest and stir for 20 sec./speed 4. Gradually add the flour mixture and stir in for another 15 sec./speed 4.

Bake cheesecake

Take the pre-baked shortcrust pastry out of the oven. Spread the curd mixture on top. Sprinkle 1/3 of the Lemon Curd over it in strips. Bake in the hot oven at 160 °C fan (180 °C top/bottom heat) for 30 - 35 minutes. Let cool completely in the switched-off oven.

Garnish and serve cheesecake

Cut into pieces before serving and spread remaining Lemon Curd over the cheesecake.
