Description

With this Thermomix® recipe, you can bake 8 delicious rolls from wheat flour, water, yeast, milk and butter in 45 minutes of working time (plus 24 hours of resting time). The recipe from the bread and rolls category is ideal for breakfast or finger food. The hearty rolls are a treat for the whole family. Simply prepare in the Thermomix® and enjoy oven-fresh.

Ingredients (10 ingredients)

  • 80 gr Wheat Flour 550
  • 80 gr Water
  • 1 gr Fresh Yeast
  • 420 gr Flour
  • 240 gr Water
  • 50 gr Milk
  • 10 gr Butter
  • 8 gr Agave Syrup/Honey/Sugar
  • 12 gr Salt
  • 7 gr Fresh Yeast

Prepare Poolish

Add wheat flour 550, water and fresh yeast to the mixing bowl and mix for 20 sec./speed 3.

Let the poolish mature

Cover the poolish and let it start for 3 hours at room temperature and then put it in the refrigerator for 9-21 hours (total fermentation time 12-24 hours - the longer, the more intense the aroma).

Prepare dough

Add poolish, flour, water, milk, butter, agave syrup/honey/sugar, salt and fresh yeast to the mixing bowl and knead for 3 min./kneading stage.

Let the dough rise

Stir the dough, if there is time, stretch and fold it a few more times and put it in the refrigerator, covered, until the next morning.

Shape rolls

Carefully turn the dough onto some flour (Semola), cut off 8 pieces and pull the corners over crosswise once and “stick” them for a little more tension.

Bake rolls

Preheat the oven (including baking sheet, steel or stone) to 250 degrees. Bake the rolls with steam (pour about 40ml of water into the oven) for 20 minutes. After 10 minutes, reduce the heat to 230 degrees.
