Description

This beef stew with vegetables in red wine is a comforting and flavorful dish, perfect for cold days. The meat, from a more economical cut, becomes tender and juicy thanks to slow cooking in the Thermomix®. The vegetables, such as leek, celery and carrot, add a sweet and aromatic touch. The red wine and vegetable broth enhance the flavor of the meat, creating a delicious sauce. I usually accompany it with roasted pumpkin, but it also goes great with mashed potatoes or white rice. An ideal dish to share with family or friends!

Ingredients (10 ingredients)

  • 1 piece piece of second or third class meat
  • 2 ramas leek
  • 2 ramas celery
  • 2 piece carrots
  • 1 copagenerosa wine
  • 700 tsp vegetable broth
  • Condiments that you want
  • 2 cucharadas Cornstarch
  • 5 cucharadasagua water
  • Pumpkins to accompany

Preparation of the vegetables

Cut 2 branches of leek, 2 branches of celery and 2 carrots into medium pieces. Place the vegetables in the Thermomix glass and crush for 5 seconds/Speed 5.

Vegetable sauce

Thermomix® Setting
8 min/248°F/Vel. 1 120

Add a little olive oil to the Thermomix glass. Program 8 minutes/Temperature 120°C/Speed 1 to sauté the vegetables.

Sealing the meat

In a separate pan, seal a piece of second or third quality meat on all sides until golden brown. Remove the meat from the pan and set aside.

Cooking the meat

180 min/212°F/Giro a la izquierda/Vel. cuchara 100 Reverse

Place the sealed meat in the Thermomix glass together with the sautéed vegetables. Add 1 generous glass of red wine, 700 cc of vegetable broth and the condiments you want (salt, pepper, bay leaf, thyme, etc.). Program 180 minutes/Temperature 100°C/Reverse rotation/Spoon speed.

Preparation of the sauce

5 min/212°F/Vel. 3 100

Remove the meat and vegetables from the Thermomix glass and set aside. Pour the cooking juice into the glass. Mix 2 tablespoons of Cornstarch with 5 tablespoons of cold water and add to the cooking juices. Program 5 minutes/Temperature 100°C/Speed 3 to thicken the sauce.

Serve

Serve the meat, vegetables and sauce. Accompany with roasted pumpkins or the desired garnish.
