Description

This Mediterranean Seafood Rice is a vibrant and flavorful dish, perfect for a summer gathering or a special occasion. I've been making this recipe for years, and it's always a crowd-pleaser. The combination of fresh mussels, shrimp, and squid with the aromatic saffron-infused rice is simply divine. It's a hearty and satisfying meal that's surprisingly easy to prepare, especially with the help of the Thermomix®. The dish is best served hot, allowing the flavors to meld together beautifully. Feel free to add other seafood like clams or scallops for an even richer taste. Enjoy!

Ingredients (12 ingredients)

  • 20 piece mussels, cleaned and debearded
  • 10 piece large shrimp
  • 2 piece large squid, cleaned and sliced into rings
  • 2 tablespoon olive oil
  • 2 pounds boneless, skinless chicken pieces cut into chunks
  • 3 clove garlic, chopped
  • 1 piece red bell pepper, sliced
  • 2 piece tomatoes, cubed
  • 3 cups long-grain white rice
  • 1 pinch saffron
  • 1 teaspoon paprika
  • 1 cup green peas

Preparation (8 steps)

Cook Mussels

Place 20 cleaned and debearded mussels in a pot with lightly salted water and cook until they open. Drain and discard any unopened mussels. This step is done outside of the Thermomix to ensure proper cooking of the mussels.

Cook Shrimp and Squid

In a separate pot, boil 10 large shrimp and 2 large squid (cleaned and sliced into rings) in lightly salted water until opaque, about 3 to 4 minutes. Drain, reserving the liquid. This step is also done outside of the Thermomix to ensure proper cooking of the seafood.

Cook Chicken

Heat 2 tablespoons of olive oil in a large skillet. Add 2 pounds of boneless, skinless chicken pieces (cut into chunks) and cook, stirring occasionally, until golden brown, about 5 minutes. Transfer the chicken to a plate. This step is done outside of the Thermomix to properly sear the chicken.

Chop Garlic

Add 3 cloves of garlic to the Thermomix bowl and chop for 3 Sec./Stufe 7.

Sauté Vegetables

Add 1 sliced red bell pepper and 2 cubed tomatoes to the Thermomix bowl. Cook for 3 Min./120°C/Stufe 1.

Cook Rice

Add the reserved liquid from the shrimp and squid, fish stock, 3 cups of salted water, 3 cups of long-grain white rice, 1 pinch of saffron, and 1 teaspoon of paprika to the Thermomix bowl. Cook for 20 Min./100°C/Stufe 2.

Add Peas

Stir in 1 cup of green peas into the rice mixture in the Thermomix bowl. Cook for 2 Min./100°C/Stufe 1.

Assemble and Serve

Pour the rice mixture into a large serving dish. Arrange the cooked vegetables, chicken, and shellfish around the rice. Serve hot.
