Description

Asian rice with chicken and vegetables is a hearty main course from the Thermomix® that is prepared in about 35 minutes. Long-grain rice, chicken breast fillet, carrots and peas form the basis for this dish in the rice or pasta salad category. Refined with ginger and spring onions, the recipe yields 4 servings. Ideal for quick, balanced family cooking.

  • 200 g Long grain rice
  • 250 g Chicken breast fillet
  • 150 g Carrots
  • 100 g Frozen peas
  • 10 g Organic ginger
  • 2 Stück Eggs
  • 2 Zehen Garlic cloves
  • 1 Bund Spring onions
  • 1 Stück Onion
  • 1 Stück Bell pepper
  • 1 Stück Chili pepper
  • 5 EL Vegetable oil
  • 1 EL Sesame oil
  • 2 EL Soy sauce
  • 2 TL Curry powder
  • 0.5 TL Cumin
  • 1 Msp. Turmeric

Preparation (11 steps)

Cook rice

Cook the long-grain rice in a separate saucepan with salted water according to the package instructions. Alternatively, have cooked rice from the previous day ready.

Chop onion, garlic and ginger

Peel, quarter and place the onion in the mixing bowl. Peel the garlic cloves and add them to the mixing bowl as well. Peel and roughly chop the ginger, then add it. Chop for 3 sec./level 5.

Chop chili pepper

Wash, halve, core and place the chili pepper in the mixing bowl. Chop for 3 sec./level 5.

Sauté onion mixture

Add 2 tablespoons of vegetable oil to the mixing bowl and sauté for 3 min./120°C/level 1.

Prepare vegetables

Clean, wash and cut the spring onions into rings. Peel the carrots and cut them into cubes. Wash, core and cut the bell pepper into strips. Prepare the frozen peas.

Prepare chicken

Pat the chicken breast fillet dry, cut into bite-sized pieces and season with salt and 2 tsp of curry powder.

Fry chicken

Heat 1 tbsp of vegetable oil in a large pan or wok and fry the chicken fillet pieces in it over medium to high heat for 3-4 minutes on all sides. Remove from the pan and set aside.

Add and sauté vegetables

Place the spring onions, carrots, bell pepper and frozen peas in the mixing bowl. Add 1 teaspoon of curry powder, cumin, turmeric and a pinch of salt. Simmer for 5 min./100°C/reverse rotation level 1. Use the spatula to stir in the ingredients if necessary.

Add chicken and rice

Add the fried chicken breast fillet and the cooked rice to the mixing bowl. Add 2 tablespoons of soy sauce. Mix for 2 min./100°C/reverse rotation level 2. Use the spatula to stir in the ingredients if necessary.

Add eggs and let set

Add the eggs to the mixing bowl and let them set for 1 min./100°C/reverse rotation level 2. Use the spatula to stir in the ingredients if necessary.

Season and serve

Season the fried rice with salt and pepper. Serve with Sambal Oelek, lime and coriander.
