This hearty rolled roast in gypsy style is a savory main course prepared in the Thermomix®. The pork roast is first seared in a pan and then braised with a spicy sauce made from peppers, onions, garlic, and various spices in the Thermomix®.   • 1.5 kg Rolled Roast (Pork Roast)
  • 250 g Onions
  • 2 piece Cloves Garlic
  • 1 piece red Pepper
  • 1 piece green Pepper
  • 1 piece yellow Pepper
  • 2 tbsp Tomato Paste
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 1 tsp sweet Paprika Powder
  • 0.5 tsp hot Paprika Powder
  • 0.5 tsp Marjoram
  • 0.5 tsp Thyme
  • 0.5 tsp Caraway
  • 200 ml Vegetable Broth
  • 1 tbsp Vinegar
  • 2 tbsp Cornstarch
  • 40 g Oil

Prepare Onions and Garlic

Peel 250g onions, halve, and place in the mixing bowl. Chop 3 sec./speed 5. Then add 2 cloves garlic and chop 3 sec./speed 7.

Sauté Onions and Garlic

Add 40g oil to the onions and garlic in the mixing bowl and sauté 3 min./120°C/speed 1.

Add Peppers, Tomato Paste, and Spices

Cut 1 red pepper (approx. 150g), 1 green pepper (approx. 150g), and 1 yellow pepper (approx. 150g) into coarse pieces and add to the mixing bowl together with 2 tbsp tomato paste, 1 tsp salt, 1/2 tsp pepper, 1 tsp sweet paprika powder, 1/2 tsp hot paprika powder, 1/2 tsp marjoram, 1/2 tsp thyme, and 1/2 tsp caraway. Chop 5 sec./speed 4.

Add Vegetable Broth and Vinegar

Add 200 ml vegetable broth and 1 tbsp vinegar and stir 10 sec./speed 3.

Sear Meat

Season 1.5 kg rolled roast (pork roast) with salt and pepper. Sear sharply on all sides in a separate pan with some oil.

Add Rolled Roast to the Mixing Bowl and Braise

Add the seared rolled roast to the vegetables in the mixing bowl. Braise 90 min./100°C/reverse/speed 1. Leave the measuring cup on.

Thicken Sauce

After the cooking time, remove the rolled roast from the mixing bowl and keep warm. Mix 2 tbsp cornstarch with a little cold water and add to the mixing bowl. Cook 5 min./100°C/speed 2 until the sauce has the desired consistency.

Season Sauce and Serve

Season the sauce with salt, pepper, and possibly a little sugar. Cut the rolled roast into slices and serve with the sauce.
