Description

These vibrant rainbow fruit rolls are a delightful and healthy treat, perfect for a light dessert or a fun snack. I've been making these for picnics and summer gatherings for years, and they're always a hit! The combination of fresh kiwi, pineapple, mango, and blueberries wrapped in delicate rice paper is simply irresistible. The homemade berry coulis adds a touch of sweetness and a burst of flavor. They are naturally vegan, gluten-free, and lactose-free, making them suitable for almost everyone. Plus, they're incredibly easy to make with the help of the Thermomix®!

Ingredients (7 ingredients)

  • 2 piece kiwi fruits
  • 0.5 piece small pineapple
  • 1 piece small mango
  • 75 g blueberries
  • 8 piece rice paper wrappers
  • 250 g frozen mixed berries
  • 3 tbsp honey

Prepare the Berry Coulis

Thermomix® Setting
30 sec/keine/Speed 10

Place 250g frozen mixed berries and 3 tbsp honey into the Thermomix bowl. Blend until smooth, about 30 Sec./Stufe 10. If the coulis is too thick, add a tablespoon of water and blend again for 10 Sek./Stufe 8 until desired consistency is reached.

Prepare the Fruit

Peel 2 kiwi fruits, ½ small pineapple, and 1 small mango. Remove the core from the pineapple and the pit from the mango. Thinly slice a few pieces of each fruit for decoration. Roughly chop the remaining fruit into small pieces. Set aside 75g blueberries.

Soften Rice Paper Wrappers

Fill a wide, shallow bowl with water. Dip one rice paper wrapper into the water for a few seconds until softened. Transfer the softened rice paper to a clean work surface.

Assemble the Rolls

Arrange a layer of thinly sliced fruit down the middle of the softened rice paper wrapper. Spoon some of the chopped fruit and a few blueberries over the sliced fruit. Fold the sides of the rice paper wrapper inward, then roll up tightly to seal. Repeat with the remaining rice paper wrappers and fruit.

Chill and Serve

Keep the fruit rolls chilled in a cool box or refrigerator until ready to serve. Serve with the berry coulis for dipping.
