Description

This rustic ring cake is an explosion of Mediterranean flavors! The ricotta makes it incredibly soft and moist, while the pesto adds an irresistible aromatic touch. The fresh cherry tomatoes on the surface, then, add a touch of color and extra flavor. Perfect for a Sunday brunch or as a delicious appetizer, this savory cake is quick and easy to prepare with the Thermomix®. Ingredients (9 ingredients)

  • 4 uova Eggs
  • 50 g Grated cheese
  • 120 g Pesto
  • 250 g Ricotta
  • 50 g Extra virgin olive oil
  • 280 g 00 flour
  • 1 packet Instant yeast for savory cakes
  • 1 tsp Fine salt
  • Cherry tomatoes

Preparation (7 steps)

Eggs and salt in the bowl

Insert 4 eggs and 1 teaspoon of fine salt into the bowl.

Addition of wet ingredients

Add 50 g of grated cheese, 120 g of pesto, 250 g of ricotta and 50 g of extra virgin olive oil into the bowl.

Addition of yeast

Add 1 sachet of instant yeast for savory cakes into the bowl.

Addition of flour

Gradually add 280 g of 00 flour into the bowl.

Preparation for cooking

Pour the mixture into a 24 cm diameter ring mold, greased and floured. Decorate the surface with cherry tomatoes cut in half.

Baking in the oven

Bake and cook at 170 °C in ventilated mode for 45 minutes, or in static mode at 180 °C for the same time.

Cooling and serving

Remove from the oven, let it cool slightly and then remove the rustic ring cake from the mold, turning it upside down on a plate. Serve warm.
