About this recipe

Rustic garlic bread is a timeless classic, a comfort food that takes me back in time, to family dinners when I was a child. My grandmother, originally from a small town in Puglia, often prepared it, using freshly baked homemade bread and fresh garlic from her garden. The scent that spread throughout the house was intoxicating, an invitation to sit at the table and share a moment of conviviality. This version of mine, prepared with the help of the Thermomix®, is a tribute to that tradition, revisited in a modern key but with the same love and the same attention to the ingredients. The secret of a good garlic bread lies in the quality of the ingredients. The bread, of course, is fundamental. I prefer to use a loaf of rustic bread, with a crispy crust and a soft, honeycombed crumb. The butter must be of excellent quality, possibly unsalted, and at room temperature to be easily worked. The garlic, the undisputed protagonist, must be fresh and fragrant. I use four cloves, but the quantity can be varied according to taste. The grated cheese, usually Parmigiano Reggiano or Grana Padano, adds a touch of flavor and helps create a golden and inviting crust. Finally, the chopped fresh parsley gives freshness and color to the mixture. The preparation with the Thermomix® is extremely simple and fast. We start by finely chopping the garlic cloves: a few seconds at speed 7 are enough to obtain a homogeneous and fragrant paste. Then, add the softened butter, grated cheese and chopped parsley. Mix everything for about 20 seconds at speed 3, until you get a creamy and well-blended mixture. A little trick: if the butter is not perfectly softened, you can slightly extend the mixing time, checking that the mixture does not overheat too much. As for the variations, you can opt for a vegetarian version using vegetable butter or margarine. For a vegan touch, you can replace the butter with extra virgin olive oil and omit the cheese, or use a grated vegan cheese. As for the spices, you can add a pinch of chili pepper for a spicy touch, or aromatic herbs such as oregano, thyme or rosemary for a more intense aroma. Rustic garlic bread is perfect to serve as an appetizer, accompanied by cured meats, cheeses and olives. It is also ideal as a side dish for grilled meat or fish, or as an accompaniment for soups and stews. It can be enjoyed hot, freshly baked, or at room temperature. As for storage, cooked garlic bread can be stored in the refrigerator for a couple of days, wrapped in aluminum foil or in an airtight container. To reheat it, you can use the traditional oven or the microwave. Alternatively, you can prepare the garlic butter mixture in advance and store it in the refrigerator for several days. When ready to use, simply spread it on the bread and bake it in the oven.
