Description

This potato and chard flan is a rustic and flavorful dish, perfect for a family dinner or a Sunday brunch. The combination of creamy potatoes, fresh chard and the smoky touch of raw ham makes it irresistible. I often prepare it in autumn, when the chard is at its best. It is a great alternative to get children to eat vegetables, and you can customize it by adding other cheeses or spices as desired. Lactose-free mozzarella also makes it suitable for those with intolerances. A real comfort food!

Ingredients (14 ingredients)

  • 880 g potatoes
  • 400 g chard
  • 1 piece lactose-free mozzarella
  • 1 piece red peppers
  • 60 g raw ham
  • 30 g grated parmesan _aged 36 months_
  • 30 g rice flour breadcrumbs
  • 1 piece eggs _optional_
  • 100 g pancetta _optional_
  • 10 g powdered ginger
  • 10 g sweet paprika
  • extra virgin olive oil
  • fine salt
  • white pepper

Preparation of potatoes and chard

Wash, peel and cut the potatoes into large pieces. Also wash the chard and cut it into strips. Insert 880 g of potatoes into the bowl. Add water to cover the potatoes and a pinch of salt. Cook for 20 Min./100°C/Stufe 1.

Cooking the chard

Empty the bowl and insert 400 g of chard cut into strips. Add water to cover the chard and a pinch of salt. Cook for 20 Min./100°C/Stufe 1.

Preparation of the pepper and mozzarella

Wash the pepper, remove the seeds and internal filaments and cut it into cubes. Cut the lactose-free mozzarella into cubes. Grate 30 g of parmesan.

Draining and chopping the chard

Drain the cooked chard and insert it into the bowl. Chop for 5 Sec./Stufe 5.

Draining and pureeing the potatoes

Drain the cooked potatoes and insert them into the bowl. Mash the potatoes for 10 Sec./Stufe 4.

Combining the ingredients

Add the chopped chard, mashed potatoes, 1 egg (optional), 30 g of grated parmesan, cubed mozzarella, diced pepper, 60 g of coarsely chopped raw ham, 10 g of powdered ginger, 10 g of sweet paprika, fine salt to taste and white pepper to taste. Mix for 20 Sec./Linkslauf Stufe 3.

Preparation for baking

Preheat the oven to 180°C. Grease a baking pan with extra virgin olive oil and sprinkle it with 30 g of rice flour breadcrumbs.

Baking in the oven

Pour the mixture into the pan and bake in the oven for about 30 minutes, or until the surface is golden brown.
