Description

This recipe for Rustic Rabbit with Baked Potatoes is a true classic of Italian cuisine that I always enjoy preparing. The tender rabbit meat, combined with the aromatic potatoes, is simply irresistible. Preparation is very simple and succeeds with the Thermomix® in no time at all. Perfect for a cozy family dinner or a special occasion. The potatoes are made especially tasty by the herbs and Parmesan cheese and form a great addition to the rabbit. A dish that conveys warmth and security and is guaranteed to taste good to everyone! Ideal for the colder days in autumn and winter.

Ingredients (10 ingredients)

  • Rabbit
  • Potatoes
  • Grated Parmesan
  • Breadcrumbs
  • 1 clove Garlic
  • Parsley
  • to taste Dried oregano
  • to taste Salt
  • to taste Black pepper
  • Extra virgin olive oil

Preparation (6 steps)

Prepare rabbit

Cut the rabbit into pieces. Grease a baking dish with extra virgin olive oil and place the rabbit pieces in it. Season with salt and pepper.

Prepare potatoes

Peel the potatoes and cut them into even slices. Place the potato slices in a bowl.

Chop garlic and parsley

Thermomix® Setting

Put a clove of garlic and a handful of parsley in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Season potatoes

Add the chopped garlic-parsley mixture to the potatoes. Season with dried oregano, grated Parmesan, breadcrumbs, salt and pepper. Drizzle with extra virgin olive oil and mix well.

Spread potatoes on the rabbit

Spread the seasoned potatoes on the rabbit pieces in the baking dish so that a layer is formed. Drizzle with a light dash of extra virgin olive oil.

Bake

Bake the baking dish in a preheated fan oven at 180°C for approx. 40 minutes. If necessary, cover the dish at the beginning to ensure even cooking of the potatoes and rabbit.
