Description

I love preparing this dish of spaghetti with homemade basil pesto! It's a simple and quick recipe, perfect for a sunny lunch or a relaxed dinner. The pesto, prepared with fresh basil, Parmesan, garlic and pine nuts, offers an explosion of Mediterranean flavors. The little touch of candied dried tomatoes brings a subtle sweetness that marries wonderfully with the basil. In addition, it's a great way to use fresh basil from the garden in the summer. A real treat for the taste buds, ready in no time!

Ingredients (7 ingredients)

  • 1 c. à s. candied dried tomatoes
  • 3 cl olive oil
  • 25 g grated parmesan
  • 50 g fresh basil
  • 0.5 clove garlic
  • 25 g pine nuts
  • Spaghetti

Preparation (7 steps)

Roasting the pine nuts

Thermomix® Setting
3 min/248°F/Speed 1 120

Pour the pine nuts into the Thermomix bowl and toast without oil. Set 3 Min./120°C/Stufe 1. Watch carefully to avoid burning.

Garlic preparation

Thermomix® Setting
3 sec/Speed 7

Peel the half clove of garlic and put it in the Thermomix bowl. Chop the garlic for 3 Sek./Stufe 7.

Pesto preparation

Thermomix® Setting
20 sec/Speed 8

Add the fresh basil, grated Parmesan and roasted pine nuts to the Thermomix bowl. Mix everything for 20 Sek./Stufe 8 until a homogeneous paste is obtained. Use the spatula to scrape the sides of the bowl if necessary.

Incorporation of dried tomatoes and oil

Thermomix® Setting

Add the candied dried tomatoes to the Thermomix bowl. Mix for 5 Sek./Stufe 3. Then add the olive oil and mix again for 10 Sek./Stufe 3.

Cooking the spaghetti

Cook the spaghetti in a saucepan of boiling salted water according to the package instructions. Drain the spaghetti.

Mixing pasta and pesto

Thermomix® Setting
1 min/Speed 2/Linkslauf Reverse

Pour the drained spaghetti into the Thermomix bowl with the pesto. Mix gently for 1 Min./Stufe 2/Linkslauf to coat the pasta well with pesto.

Serve

Serve the spaghetti with basil pesto immediately.
