Description

I have been making this wild boar goulash for several years and it is always a highlight, especially in the cold season. The wild boar meat becomes wonderfully tender and the sauce gets a deep, aromatic aroma from the red wine and spices. Perfect for a festive meal or a cozy evening with friends. Goes well with bread dumplings or potatoes. A hearty dish that warms and simply tastes delicious! The dish can also be prepared well in advance.

Ingredients (15 ingredients)

  • 500 g Goulash from wild boar
  • 0.5 Scheibe/n Belly bacon
  • 1 Stück Onion(s)
  • 250 ml Red wine dry
  • 250 ml Game stock
  • 1 Stück Bay leaf
  • 3 Stück Juniper berry(ies)
  • 2 Stück Allspice berries
  • 1 EL Tomato paste
  • 1 EL Flour
  • 2 EL Crème fraîche
  • 2 EL Redcurrant jelly
  • 1 etwas Clarified butter
  • 1 etwas Black pepper, ground
  • 1 etwas Salt

Preparation (9 steps)

Chop onion

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down the sides with the spatula.

Sauté onion

Leave the chopped onion in the mixing bowl. Add some clarified butter and sauté for 3 min./120°C/speed 1.

Sauté tomato paste

Add 1 tbsp tomato paste and sauté for 1 min./120°C/speed 1.

Sprinkle with flour and sauté

Add 1 tbsp flour and sauté for 30 sec./100°C/speed 1.

Deglaze with red wine

Thermomix® Setting
1 min/212°F/Speed 2 100

Slowly add 250 ml red wine while stirring and bring to a boil for 1 min./100°C/speed 2.

Pour in game stock and dissolve browned bits

Pour in 250 ml game stock and stir for 20 sec./speed 3 to dissolve the browned bits.

Add goulash and season

Add 500 g of seared wild boar goulash (see preparation), 1 bay leaf, 3 juniper berries, 2 allspice berries and some pepper to the mixing bowl. Simmer for 90 min./95°C/reverse rotation speed 1.

Reduce sauce

After the cooking time has elapsed, remove the bay leaf, juniper berries and allspice berries. Reduce for 15 min./Varoma/speed 2 without the measuring cup to make the sauce thicker.

Refine and season

Add 2 tbsp crème fraîche and some redcurrant jelly. Season with salt and pepper and stir for 1 min./90°C/reverse rotation speed 1.
