Description

Hearty mushroom dish with herb pesto and parmesan snacks.

Ingredients (13 ingredients)

  • 4 Stk. Garlic cloves
  • 0.5 Bund Thyme
  • 0.5 Bund Basil
  • 0.5 Stk. Organic lemon
  • 2 EL Pine nuts
  • 50 g shaved Parmesan or vegetarian hard cheese
  • 2 EL Olive oil
  • 50 ml Olive oil
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 4 Stk. Giant mushrooms (approx. 300 g) (Portobellos)
  • 8 Stk. Minute steaks (à approx. 80 g; chicken, beef or pork)
  • 2 EL Sunflower oil

Preparation (11 steps)

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Peel 1 garlic clove and place in the mixing bowl. Chop for 3 sec./speed 7.

Prepare herbs

Wash thyme and basil and, except for 3 sprigs of thyme, pluck. Set aside.

Prepare lemon

Wash lemon in hot water. Grate zest and squeeze juice. Set aside.

Roast pine nuts

Roast pine nuts in a pan without fat. Set aside.

Prepare pesto

Thermomix® Setting
20 sec/Speed 8

Place herbs, garlic, pine nuts, half of the Parmesan, 50 ml olive oil, lemon zest and juice in the mixing bowl. Puree for 20 sec./speed 8. Season vigorously with salt and pepper.

Prepare mushrooms

Clean 2 mushrooms and place on a baking sheet lined with baking paper. Season with salt and pepper and drizzle with 2 tbsp olive oil.

Bake mushrooms

Bake the mushrooms in a preheated oven (electric oven: 180 °C/convection oven: 160 °C) for 10-12 minutes.

Prepare meat

Pat the meat dry. Peel remaining garlic.

Fry meat

Heat 2 tbsp sunflower oil in a large pan, sauté garlic and 3 sprigs of thyme in it. Add meat and fry for about 1 minute per side.

Refine meat

Sprinkle meat with remaining Parmesan and heat briefly.

Arrange

Arrange the baked mushrooms on plates, place the meat snacks on top and garnish with some pesto.
