Description

This hearty pasta pan is real comfort food! With spicy sausage, fresh spring onions and a good portion of cheese, it's perfect for a quick and easy evening. Preparation is very simple and can be done in the Thermomix® in no time at all. I love how the flavors of ajvar, coriander and rosemary combine with the creamy cheese. An ideal dish for students or anyone who likes it uncomplicated. If you like, you can add some fresh vegetables. Simple, quick and delicious!

Ingredients (17 ingredients)

  • 150 g Pasta (Maccheroncini)
  • 150 g Cabanossi
  • 4 piece Spring onion(s)
  • 4 clove Garlic
  • 150 g Date tomato(es)
  • 3 piece Egg(s)
  • 100 g Emmentaler grated
  • 1 tbsp Tomato paste
  • 1 tbsp Ajvar spicy
  • 400 ml Vegetable broth
  • 100 ml Water
  • 2 tsp Coriander powder
  • 2 tsp Rosemary dried
  • 2 Handvoll Basil fresh
  • 1 tbsp Oil for frying
  • Salt
  • Pepper

Preparation (9 steps)

Prepare cabanossi

Thermomix® Setting

Add 150 g cabanossi to the mixing bowl and chop for 5 sec/speed 5. Then transfer.

Chop spring onions and garlic

Add 4 spring onions (only the white part) and 4 cloves of garlic to the mixing bowl and chop for 3 sec/speed 5. Scrape down with the spatula.

Sauté

Add 1 tbsp oil and sauté for 3 min/120°C/speed 1.

Add tomato paste

Add 1 tbsp, heaped, tomato paste and sauté for 1 min/120°C/speed 1.

Deglaze and season

Add 400 ml vegetable broth, 100 ml water, 1 tbsp, heaped, ajvar spicy, 2 tsp, level, coriander powder and 2 tsp rosemary dried.

Cook pasta

10 min/212°F/Speed 1 100

Add 150 g pasta (Maccheroncini) and the prepared cabanossi and cook for 10 min/100°C/speed 1. Note the pasta cooking time and adjust if necessary.

Add eggs and spring onions

2 min/194°F/Linkslauf Speed 1 90 Reverse

Add 3 eggs and the green rings of the spring onions and stir in for 2 min/90°C/reverse speed 1 until the egg begins to set.

Add cheese and tomatoes

Add 150 g date tomatoes (halved or quartered) and 100 g Emmentaler grated and stir in for 1 min/60°C/reverse speed 1 until the cheese has melted. Season with salt and pepper.

Stir in basil

10 sec/Linkslauf Speed 1 Reverse

Add 2 handfuls of basil fresh, roughly chopped, and stir in for 10 sec/reverse speed 1.
