Description

This savory pancake spinach layered dish is a wonderfully uncomplicated dish that is baked golden brown in the oven. The combination of juicy pancakes, creamy spinach and an aromatic tomato sauce makes it a real treat. I love how quickly it is prepared and how well it can be prepared in advance. Perfect for a quick lunch or a cozy dinner with friends. The grated cheese provides a nice crust and rounds off the dish perfectly. An absolute must for all spinach lovers!

Ingredients (12 ingredients)

  • 1 piece Onion
  • 1 clove Garlic
  • 1 tbsp Oil
  • 1 etwas Oil
  • 425 ml Diced tomatoes (can)
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Sugar
  • 400 g Leaf spinach
  • 200 g Herb cream cheese
  • 2 Packungen Pancakes (refrigerated section)
  • 50 g Grated Gouda

Preparation (7 steps)

Chop onion and garlic

Put onion and garlic clove into the mixing bowl and chop for 3 seconds/speed 5. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add 1 tablespoon of oil and sauté for 3 minutes/120°C/speed 1.

Prepare tomato sauce

Thermomix® Setting

Add the diced tomatoes and cook for 5 minutes/100°C/speed 1. Season with salt, pepper and sugar.

Prepare spinach

Pick over, wash, scald spinach with boiling water, squeeze out and chop roughly. Mix in a bowl with the cream cheese.

Prepare casserole dish

Preheat the oven to 200°C top/bottom heat (180°C fan oven). Grease a casserole dish with some oil.

Layer lasagna

Pour approx. 1/4 of the tomato sauce into the casserole dish. Place a pancake in the dish. Spread 1 tablespoon of sauce on top and spread approx. 2 tablespoons of spinach mix on top. Repeat this process with the remaining pancakes, 1 tablespoon of tomato sauce and 2 tablespoons of spinach each.

Finish and bake lasagna

Spread the remaining tomato sauce on the top pancake and sprinkle with the grated Gouda. Bake in the preheated oven for approx. 20 minutes.

This savory pancake spinach layered dish is a dish that originated at our home when we needed something quick and still savory again. The idea came when I discovered ready-made pancakes in the refrigerated section and wondered what you could do with them besides sweet versions. The result was this layered dish, which has been a firm part of our repertoire ever since. The ingredients are deliberately kept simple, but each plays an important role. The onion and garlic form the aromatic base for the tomato sauce. The diced tomatoes from the can are practical and give the sauce a nice texture. Salt, pepper and a pinch of sugar balance the acidity of the tomatoes. The leaf spinach, preferably fresh, brings an earthy note and of course a good portion of vitamins into play. The herb cream cheese provides creaminess and an additional flavor dimension. The ready-made pancakes are the base of the layered dish and make the preparation so uncomplicated. And the grated Gouda? That is the icing on the cake, the golden brown crust that perfectly rounds off the dish. When preparing in the Thermomix®, it is important not to chop the onion and garlic too finely so that they do not burn when sautéing. The temperature of 120°C is ideal for developing the aromas without burning. With the spinach, it is important to squeeze it out well after scalding so that the layered dish does not become too watery. And when layering, the rule is: do not put too much sauce and spinach on each pancake, otherwise it will become a mushy affair. It is better to be a little more economical and make several layers. There are many possible variations. For a vegetarian option, you can replace the Gouda with another cheese. If you like it vegan, you can use vegan pancakes, vegan cream cheese and vegan cheese. You can also experiment with the spices. Oregano, basil or thyme go perfectly with the tomato sauce. If you like it a little spicier, you can add a pinch of chili. The layered dish is best served warm, straight from the oven. A fresh salad or a herb dip goes well with it. But it is also a pleasure cold, for example as a lunch for on the go. The layered dish can be prepared well in advance. You can layer it the day before and then store it in the refrigerator. Before baking, however, it should have some time to reach room temperature. Leftovers can be stored in the refrigerator and warmed up the next day.
