Description

This savory rice pan with chicken and seafood is a real treat! I like to make it when I need something quick, but still want something special on the table. The combination of tender chicken, juicy shrimp, crunchy bell pepper, and aromatic saffron is simply unbeatable. The preparation in the Thermomix® makes the dish super easy and guarantees success. A squeeze of lemon perfectly rounds it off. Ideal for a quick lunch or an uncomplicated dinner with friends!

  • 250 g Shrimp
  • 1 piece Bell pepper (red)
  • 2 piece Onions
  • 2 clove Garlic
  • 320 g Chicken breast fillet
  • 2 tbsp Olive oil
  • 250 g Risotto rice
  • 550 ml Vegetable broth
  • 200 g Peas (frozen)
  • to taste Salt
  • to taste Pepper
  • 0.5 tsp Saffron threads
  • 1 piece Lemon

Prepare vegetables

Wash the bell pepper, remove the seeds and dice the flesh. Peel the onions, halve them and place them in the mixing bowl with the garlic cloves. Chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Add 250 g risotto rice and 550 ml vegetable broth to the mixing bowl and simmer for 3 min./100°C/speed 1 without the measuring cup.

Add 320 g chicken breast fillet in bite-sized pieces, 200 g peas (frozen), the diced bell pepper, 250 g shrimp, 0.5 tsp saffron threads, salt and pepper. Mix for 1 min./reverse/speed 1.
