Description

This Chinese cabbage salad with chicken, peanuts and lemon is a real delight! I often prepare it for a quick lunch or a picnic. The Chinese cabbage brings a crunchy texture, the chicken a source of protein, the peanuts crunchiness and the lemon a touch of freshness. It is a complete and balanced dish, perfect for sunny days. Feel free to add other vegetables such as grated carrots or cucumbers for even more flavors. A real treat for the taste buds!

Ingredients (7 ingredients)

  • 1 piece Chinese cabbage
  • 3 piece Chicken escalope
  • 2 poignée Peanut
  • 1 piece Lemon juice
  • 1 bouquet Fresh mint
  • Olive oil
  • Pepper

Preparation (7 steps)

Chicken preparation

Cut the 3 chicken escalopes into small pieces. Heat a dash of olive oil in a pan over medium heat. Sauté the pieces of chicken escalopes for 5 minutes, mixing well. Remove the pan from the heat and set aside.

Chinese cabbage preparation

Clean and cut the 1 Chinese cabbage into thin strips. Put it in a salad bowl.

Mint and peanut preparation

Clean and pat dry the 1 bunch of fresh mint. Put the mint and the 2 handfuls of peanuts in the Thermomix bowl.

Mixing the mint and peanuts

Mix the mint and peanuts for 5 seconds at speed 7.

Salad assembly

Add the peanut-mint mixture to the Chinese cabbage in the salad bowl. Pour in the juice of 1 lemon, a dash of olive oil and then pepper to your taste.

Adding chicken and final mixing

Finally add the cooled chicken pieces and stir again.

Refrigeration and serving

Store the Chinese cabbage salad with chicken in the refrigerator until serving. Serve the Chinese cabbage salad with chicken very fresh in bowls or deep plates as a starter.
