Description

This Brussels sprout salad with walnuts is a real treat and super quick to prepare! I love how the slightly bitter note of the Brussels sprouts harmonizes perfectly with the sweetness of the honey and the nutty aroma of the walnuts. A dash of lemon juice provides the necessary freshness. The salad is ideal as a side dish to a hearty meal or as a light main course. Especially in autumn and winter it is a great vitamin bomb. And the best part: it is ready in no time!

Ingredients (8 ingredients)

  • 600 g Brussels sprouts
  • 0.5 piece small red onion
  • 4 tbsp Walnuts
  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Honey
  • 1 tsp Salt
  • 1 pinch Pepper

Preparation (7 steps)

Prepare Brussels sprouts

Thermomix® Setting
8 min/212°F/Speed 1 100

Remove the stalk from the Brussels sprout florets and detach the outer leaves. Place the prepared Brussels sprout florets in the mixing bowl and pour over 800 ml water and 1 tsp salt. Insert the steamer basket and spread the Brussels sprouts in it. Cook for 8 Min./100°C/level 1.

Quench Brussels sprouts

After cooking, place the Brussels sprouts in a sieve and quench with cold water to stop the cooking process and preserve the color. Then drain well.

Chop walnuts

Thermomix® Setting
3 sec/Speed 5

Put the walnuts in the mixing bowl and chop for 3 sec./level 5. Then transfer.

Roast walnuts

Roast the chopped walnuts in a pan without fat until golden brown. Turn them so they don't burn. Then let cool.

Chop red onion

Thermomix® Setting
3 sec/Speed 5

Put half the red onion in the mixing bowl and chop for 3 sec./level 5. Scrape from the edge with the spatula.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Put olive oil, lemon juice, honey, salt and pepper in the mixing bowl and stir for 10 sec./level 3.

Mix salad

Put the cooled Brussels sprouts, the chopped red onion and the roasted walnuts in a bowl. Pour the dressing from the mixing bowl over it and mix everything well.
