Description

These Salmon Rice Salad Wraps are a light and refreshing dish, perfect for warm days! I love how the creamy cream cheese and avocado harmonize with the salty smoked salmon and the crunchy lettuce. The preparation is super easy and quick, ideal when things need to be done quickly again. The rice makes the wraps filling, but still light. A great dish for a quick lunch or a light dinner. Vary the recipe with fresh herbs or other vegetables!

Ingredients (9 ingredients)

  • 6 Blätter Iceberg lettuce
  • 200 g Smoked salmon
  • 100 g Short grain rice or risotto rice, whole grain
  • 60 g Herb cream cheese possibly with wild garlic
  • 100 g Mozzarella
  • 0.5 piece Avocado(s)
  • 40 g Tomato(es), dried
  • 100 g Cucumber(s)
  • Lemon juice

Preparation (5 steps)

Cook rice

Thermomix® Setting
30 min/212°F/Speed 1 100

Add 100 g short grain rice or risotto rice, whole grain to the simmering basket and cook with water in the mixing bowl according to the package instructions. Attach simmering basket and cook for 30 Min./100°C/Stufe 1. After the cooking time, loosen the rice with the spatula and set aside.

Prepare avocado tomato mixture

Thermomix® Setting
5 sec/Speed 4

Peel, core and place 0.5 avocado(s) in the mixing bowl. Halve 40 g dried tomatoes (or fresh tomato to taste) and also add to the mixing bowl. Chop for 5 Sek./Stufe 4. Season with pepper, salt and some lemon juice and transfer.

Mix rice with cream cheese

Thermomix® Setting
10 sec/Speed 3

Add the cooked rice together with 60 g herb cream cheese (possibly with wild garlic) to the mixing bowl and mix for 10 Sek./Stufe 3.

Top salad wraps

Carefully peel off 6 leaves of iceberg lettuce. Top the lettuce leaves with 200 g smoked salmon, 100 g mozzarella, the avocado-tomato mixture and 100 g cucumber(s) in strips in the middle. Place the rice with the cream cheese on the lettuce leaves.

Roll up salad wraps

Roll up the lettuce leaves into wraps. To do this, fold the sides inward and then carefully roll up from the end of the leaf.
