Description

This spelt salad with chicken and vegetables is a fresh and light main course, perfect for the summer. The combination of pearled spelt, rich in fiber, with chicken and seasonal vegetables makes it a healthy and tasty option. I often prepare it for a quick lunch or for an outdoor picnic. The final touch of extra virgin olive oil and black pepper enhances the flavors of all the ingredients. It is prepared in a short time and is ideal to take to the office or to enjoy under an umbrella. Try it, it will win you over!

Ingredients (9 ingredients)

  • 150 g Pearled spelt
  • 200 g Chicken breast
  • 1 piece Carrots
  • 1 piece Cucumber
  • 0.25 piece Red onion
  • 10 piece Black olives
  • 3 tbsp Extra virgin olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (5 steps)

Cooking the spelt

Thermomix® Setting
20 min/212°F/Speed 4 100

Pour 500 ml of water into the jug. Add a pinch of salt. Place the basket and pour 150 g of pearled spelt into the basket. Cook for 20 Min./100°C/Stufe 4.

Preparing the chicken

Heat a drizzle of oil in a pan. Cook 200 g of whole chicken breast, browning it well on both sides. Season with salt and pepper and cook over medium heat for about 15 minutes. Once cooked, let it cool completely and cut it into cubes.

Preparing the vegetables

Peel 1 carrot and 1 cucumber and cut them into cubes. Finely slice 1/4 of a red onion and cut 10 black olives into rounds.

Assembling the salad

In a large bowl, combine the cooked and cooled spelt, the cubed chicken and all the prepared vegetables: carrots, cucumber, onion and olives.

Seasoning and serving

Season the salad with 3 tablespoons of extra virgin olive oil, salt and a generous sprinkling of pepper. Mix everything thoroughly and serve.
