Description

This teriyaki salmon with basmati rice and pak choi is a delightful and healthy meal that's quick to prepare. I've been making this dish for myself on busy weeknights, and it always hits the spot. The combination of savory teriyaki salmon, fluffy basmati rice, and slightly bitter pak choi creates a balanced and satisfying flavor profile. It's perfect for a light yet fulfilling dinner. Feel free to add a squeeze of lime for extra zest! This recipe is a great way to enjoy a delicious and nutritious meal without spending hours in the kitchen.

Ingredients (8 ingredients)

  • 1 tbsp teriyaki sauce
  • 1 tbsp sweet chilli sauce
  • 1 piece salmon fillet
  • 50 g wholemeal basmati rice
  • 1 head pak choi
  • 1 tsp sesame seed
  • 2 piece spring onions
  • 1 bunch coriander

Preparation (4 steps)

Prepare the Salmon Marinade

In a shallow dish, combine 1 tbsp teriyaki sauce and 1 tbsp sweet chilli sauce. Mix well. Lay the salmon fillet in the marinade, flesh-side down. Set aside.

Cook the Rice

Thermomix® Setting
20 min/212°F/Speed 1 100

Place 50g wholemeal basmati rice in the Thermomix. Add 200ml water. Cook for 20 Min./100°C/Stufe 1. Place the pak choi in the Varoma attachment and steam for the last 6 minutes of cooking time.

Grill the Salmon

Preheat the grill to high. Place the salmon fillet, skin-side up, on a baking tray lined with foil. Grill for 4-5 mins, basting with the marinade, then turn over and grill for a further 3 mins. Sprinkle with 1 tsp sesame seeds and cook for 1 min more until the seeds are toasted and the salmon is cooked through.

Final Touches

Thermomix® Setting
10 sec/Speed 2/Linkslauf Reverse

Stir 2 spring onions and a small bunch of coriander through the rice in the Thermomix for 10 Sec./Stufe 2/Linkslauf. Serve topped with the salmon fillet. Spoon over any excess marinade left in the baking tray, and add a squeeze of lime. Serve the steamed pak choi alongside.
