Description

I love preparing this crispy salmon! The salmon morsels, wrapped in a cornflakes breading, are perfect as a tasty appetizer or as a light and tasty second course. The yogurt and chives sauce adds a touch of freshness that goes very well with the flavor of the salmon. The preparation is really simple and quick, ideal for an impromptu dinner or a light lunch. The secret is to cut the salmon into cubes of similar size for even cooking. Try it, it will win you over!

Ingredients (11 ingredients)

  • 600 g salmon
  • 2 piece eggs
  • 0.5 piece lemons _the juice_
  • fine salt
  • cornflakes
  • seed oil _spray_
  • 125 g plain yogurt
  • 0.5 piece lemons _the juice_
  • chives
  • olive oil
  • fine salt

Preparation (8 steps)

Preparation of the salmon

Cut 600 g of salmon into cubes of about 2 cm per side, trying to obtain similar sizes.

Preparation of the marinade

Thermomix® Setting
10 sec/Speed 4

In the mixing bowl, insert 2 eggs, fine salt (to taste) and the juice of ½ lemon. Mix for 10 Sec./Stufe 4.

Marinating the salmon

Pour the egg mixture over the cubed salmon in a bowl. Gently mix with your hands and leave to marinate for 5-10 minutes.

Preparation of the cornflakes

Pour the cornflakes (to taste) into a dish and coarsely crumble them with your hands.

Breading the salmon

Take the salmon cubes from the marinade and pass them in the crumbled cornflakes, making sure they adhere well on all sides.

Cooking the salmon

Place the breaded salmon morsels in the basket of an air fryer lined with baking paper. Spray with seed oil (spray to taste). Cook in an air fryer at 180°C for about 8 minutes. (This step is not performed in the Thermomix).

Preparation of the yogurt sauce

Thermomix® Setting
15 sec/Speed 3

In the mixing bowl, insert 125 g of plain yogurt, the juice of ½ lemon, chives (to taste) cut into pieces, olive oil (to taste) and fine salt (to taste). Mix for 15 Sek./Stufe 3.

Serve

Serve the hot salmon morsels accompanied by the yogurt and chives sauce.
