Description

These savory sandwiches with apricot and bacon are a real treat! The combination of sweet apricots, salty bacon and spicy cheese is simply irresistible. I like to make them for brunch or a quick lunch. The preparation is super easy and quick. If you like it a little spicier, you can add a pinch of chili. The sandwiches taste best warm, when the cheese is nicely melted. A great recipe when you need something quick and still want to put something special on the table!

Ingredients (8 ingredients)

  • 0.5 piece red Onion
  • 100 g Bacon (slices)
  • 1 tsp Oil
  • 2 piece Apricots (dried)
  • 2 slice Gouda Holland old
  • 4 slice White bread
  • 2 tbsp Sweet cream butter
  • 4 tsp Apricot jam

Preparation (7 steps)

Chop Onions

Put half of the red onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Sauté Onions

Thermomix® Setting

Add 1 tsp of oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Remove Onions

Remove the sautéed onions from the mixing bowl and set aside. Clean the mixing bowl.

Prepare Apricots

Cut the dried apricots into small cubes and set aside.

Spread Bread

Spread a little butter on one side of all slices of bread. Spread 1 tsp of apricot jam on the other side.

Top Sandwiches

Spread the diced apricots and onion rings on the jam and cover with half a slice of Gouda. Place the bacon slices on the cheese and cover with another half slice of Gouda. Place the second slices of bread on the sandwiches with the buttered side facing up.

Grill Sandwiches

Heat a grill pan and fry the sandwiches over low heat until the cheese melts. Press together with a spatula. Remove sandwiches from the pan, cut in half and serve hot.
