Description

This rice pan with small sausage balls is a hearty and quick dish for everyday life. I like to make it when things need to be quick and everyone needs to be full. The small balls made from sausage meat are especially popular with children. The mushrooms and tomatoes bring a nice freshness to the pan. A dollop of crème fraîche makes the whole thing nice and creamy. If you like, you can sprinkle some fresh parsley over it. The rice pan is ideal if you have rice left over from the previous day. This way nothing is wasted and there is a delicious lunch or dinner.

Ingredients (12 ingredients)

  • 250 g Rice
  • 500 ml Vegetable broth (instant)
  • 3 piece Veal sausages
  • 2 tbsp Oil
  • 1 bunch Spring onions
  • 250 g Mushrooms
  • 4 piece Tomatoes
  • Salt
  • Pepper
  • 0.5 bunch Parsley
  • 0.5 container Crème fraîche
  • Colorful pepper

Prepare vegetable broth

Add 500 ml water and the vegetable broth to the mixing bowl and bring to a boil for 5 min./100°C/speed 1.

Cook rice

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 250 g rice to the boiling broth in the mixing bowl and cook for 20 min./100°C/speed 1. Use simmering basket. After the cooking time, transfer the rice and keep warm.

Form and fry sausage meat balls

Press the sausage meat out of the veal sausages (3 pieces of 125 g each) and form into small balls. Heat 2 tbsp oil in a pan and fry the sausage meat balls all around for approx. 5 minutes. Then remove from the pan and set aside.

Prepare vegetables

Clean, wash and cut 1 bunch of spring onions into pieces. Wash, clean and halve 250 g of mushrooms as desired. Wash, clean and cut 4 tomatoes into wedges.

Sauté mushrooms

Sauté the mushrooms in the pan in the frying fat of the sausage meat balls. Add spring onions and tomatoes and fry for approx. 3 minutes.

Add rice and sausage meat balls

Add the cooked rice and the sausage meat balls to the vegetables in the pan and heat everything again briefly. Season with salt and pepper.

Chop parsley

Wash ½ bunch of parsley, pat dry and place in the mixing bowl. Chop for 3 sec./speed 5.

Serve

Sprinkle the rice pan with the chopped parsley and serve with a dollop of crème fraîche (½ cup). Season with colorful pepper to taste.

This hearty rice pan with sausage balls is a dish that has been on the table at our house since my childhood. My grandma always cooked it when we unexpectedly had many hungry mouths to feed. It's a simple, down-to-earth meal that still tastes good and fills you up. The little sausage balls were always a hit with us children, of course. The rice forms the basis of this pan. I prefer long-grain rice because it stays nice and loose and doesn't stick together as quickly. The vegetable broth provides the flavor and the necessary liquid so that the rice can cook perfectly in the Thermomix®. The veal sausages are the heart of the dish. Their sausage meat gives the small balls a spicy flavor that harmonizes wonderfully with the vegetables. The spring onions bring a slight spiciness and freshness to the pan, while the mushrooms provide an earthy note and a pleasant texture. The tomatoes contribute a fruity acidity that balances the dish. The preparation in the Thermomix® is very simple. First, the vegetable broth is prepared, then the rice is cooked in it. It is important to use the simmering basket so that the rice does not burn on the bottom of the mixing bowl. While the rice is cooking, the sausage meat balls can be formed and fried. Frying in the pan creates a nice crust and a more intense flavor. The vegetables are then sautéed in the frying fat of the balls to absorb the aromas. Finally, rice, balls and vegetables are mixed in the pan and heated briefly. For a vegetarian version, the sausage balls can be replaced with vegetarian sausage or tofu balls. Instead of veal sausage, you can also use poultry sausage or Merguez. If you like it a little spicier, you can add a chili pepper or some Sambal Oelek. Instead of crème fraîche, you can also use yogurt or sour cream. The rice pan can be served plain or with a fresh salad as a side dish. A green salad with a light vinegar-oil dressing goes perfectly with it. A tomato salad or a cucumber salad are also a good choice. The rice pan can be prepared well in advance. The rice can be cooked the day before. The sausage meat balls can also be prepared and stored in the refrigerator. The vegetables can also be cut and made ready. This way the dish is quick to prepare when things need to be done quickly. Leftovers of the rice pan can be stored in the refrigerator and reheated the next day. It also tastes very good cold.
