This salmon in butter with aromatic mushrooms is a recipe that I prepare often at home. It is a delicious and nutritious option for a quick weeknight dinner. Ingredients (8 ingredients)

  • 2 g Fresh salmon (clean portion loins)
  • 250 g Portobello mushrooms or other small format mushroom
  • 2 clove Garlic
  • 10 g Fine Herbs (chives, oregano, thyme, rosemary...)
  • 30 g Butter
  • 1 pinch Ground black pepper
  • 1 pinch Salt
  • 1 tbsp Extra virgin olive oil

Preparation of the garlic and herbs

Peel the garlic cloves and place them in the bowl. Program 3 seconds/speed 7 to chop them finely. Remove and reserve. Wash, dry and finely chop the fresh herbs. Reserve.

Sautéing the mushrooms

Thermomix® Setting
8 min/Varoma/Giro a la izquierda/velocidad cuchara Varoma Reverse

Add the butter to the bowl and program 3 minutes/120°C/speed 1 to melt it. Add the chopped garlic and cut mushrooms. Add salt and pepper to taste. Program 8 minutes/Varoma/Reverse direction/spoon speed. Stir with the spatula to ensure even cooking.

Incorporation of the herbs and final cooking

Thermomix® Setting
2 min/212°F/Giro a la izquierda/velocidad cuchara 100 Reverse

Add the chopped herbs to the bowl and program 2 minutes/100°C/Reverse direction/spoon speed. Stir gently with the spatula. Remove the mushrooms and reserve.

Searing the salmon in a pan

Heat a frying pan over medium-high heat with a little olive oil. Sear the previously seasoned salmon loins for approximately 1 minute on each side, pressing lightly with a spatula. Remove the salmon from the pan and reserve.

Completion of the dish

Place the sautéed mushrooms on a platter. Arrange the salmon loins over the mushrooms. Serve immediately.
