This salmon on leaf spinach is a light and protein-rich main course, ideal for a healthy diet.   • 1 piece Onion
  • 2 Zehen Garlic
  • 1 tbsp Rapeseed oil
  • 500 g Salmon fillet without skin
  • 200 g Cream
  • 2 tbsp Cream cheese with herbs
  • 1 tbsp Lemon juice
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • to taste Chili

Chop onion and garlic

Peel and quarter the onion. Peel the garlic cloves. Put the onion and garlic in the mixing bowl and chop for 3 seconds/speed 5. Use the spatula to push everything down from the edge.

Wash the young spinach thoroughly and drain. Remove coarse stems.

Prepare casserole dish

Preheat the oven to 180 degrees top and bottom heat. Put the spinach in a casserole dish.

Place and season salmon fillets

Place the salmon fillets on the spinach in the casserole dish. Drizzle with 1 tbsp lemon juice and season with salt and pepper.

Place the casserole dish in the preheated oven and cook for approx. 20 minutes until the salmon is cooked.

It is a wonderful combination of the freshness of the spinach and the richness of the salmon, which complement each other perfectly. I remember my grandmother used to make spinach with fish, but more classically in a pan. This Thermomix® version is a modern interpretation that simplifies the process and intensifies the taste. The young spinach forms the basis of this dish. It not only provides important vitamins and minerals, but also a pleasant, slightly tart note that provides a nice contrast to the fatty salmon. The onion and garlic, which are finely chopped and sautéed in the Thermomix®, provide an aromatic base. The rapeseed oil serves as a flavor carrier and helps to release the flavors. The salmon, ideally without skin, is the star of the dish. It is rich in omega-3 fatty acids and gives the dish a juicy, tender texture. The cream and cream cheese with herbs provide a creamy consistency and bind the flavors. Lemon juice brings a fresh acidity into play, which brightens the dish. Salt, pepper, nutmeg and chili round off the taste profile and give the spinach a pleasant spice. When preparing in the Thermomix®, it is important not to cook the spinach for too long, otherwise it will become mushy. The cooking time of 5 minutes is ideal to let it collapse without losing its texture. Be sure to use the reverse rotation so that the spinach is not chopped. When seasoning the spinach, you can vary according to taste. If you prefer it a little milder, you can leave out or reduce the chili. For a vegetarian version, the salmon can be replaced with halloumi or tofu. For a vegan version, you can replace the salmon with smoked tofu and use vegetable cream and cream cheese. Serve the salmon on leaf spinach best directly from the oven. A fresh salad or a side dish of rice or potatoes goes perfectly with it. A glass of dry white wine rounds off the dish perfectly. Leftovers can be stored in the refrigerator and reheated the next day. The dish can also be prepared well in advance. The spinach can be prepared in advance and placed in the casserole dish.
