Description

This Japanese-inspired chicken curry is a flavorful and comforting dish, perfect for a cozy weeknight meal. I've been making this recipe for years, and it's always a hit! The combination of tender chicken, hearty vegetables, and a rich, savory curry sauce is simply irresistible. The touch of honey and rice wine vinegar adds a unique sweetness and tanginess that sets it apart. It's especially delicious served with fluffy rice and Japanese pickles. This curry is also great for meal prepping – it tastes even better the next day!

Ingredients (16 ingredients)

  • 1 piece prepared roast chicken
  • 1 tbsp vegetable oil
  • 2 piece onions
  • 2 clove large garlic cloves
  • 25 g ginger
  • 45 g unsalted butter
  • 30 g plain flour
  • 1 tbsp medium curry powder
  • 0.5 tsp garam masala
  • 850 ml vegetable stock
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp rice wine vinegar
  • 500 g Maris Piper potatoes
  • 3 piece large carrots
  • Japanese pickles

Preparation (6 steps)

Prepare Onions, Garlic and Ginger

Peel and quarter 2 onions. Place them into the mixing bowl and chop for 3 sec/Stufe 5. Scrape down the sides of the mixing bowl with a spatula.

Sauté Onions, Garlic and Ginger

Add 1 tbsp vegetable oil, 2 large garlic cloves and 25g ginger to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Add Butter and Spices

Add 45g unsalted butter, 30g plain flour, 1 tbsp medium curry powder and ½ tsp garam masala to the mixing bowl and cook for 4 Min./100°C/Stufe 2.

Add Vegetable Stock and Simmer

15 min/212°F/Speed 2 100

Gradually add 850ml vegetable stock to the mixing bowl, stirring well after each addition. Then add 1 tbsp soy sauce, 1 tbsp honey and 2 tsp rice wine vinegar. Cook for 15 Min./100°C/Stufe 2.

Add Potatoes and Carrots

15 min/212°F/Linkslauf Speed 1 100 Reverse

Add 500g Maris Piper potatoes (peeled and cubed) and 3 large carrots (peeled and sliced) to the mixing bowl. Cook for 15 Min./100°C/Linkslauf Stufe 1.

Slice 1 prepared roast chicken and serve with the curry sauce. Garnish with Japanese pickles, if desired.
