Description

These savory fish toast bites are a quick and easy snack for in between or a casual party. The crispy fried fish fingers in combination with the lightly toasted bread and a dab of mayonnaise are reminiscent of a well-known fast food classic, but are homemade in no time at all. If you like, you can spice up the bites with fresh vegetables such as cabbage, cucumbers, corn, peppers or onions. This turns the simple snack into a small meal that delights both young and old. The preparation is very simple and guaranteed to succeed!

Prepare fish fingers

Fry the fish fingers in a deep fryer at 170°C for 4 to 4.5 minutes. Be careful not to fry the fish fingers for too long, as they will become too dark and the taste will suffer.

Toast toast

Toast the toast bread only lightly in the toaster, it should not get any color, otherwise it could break when folded.

Top toast

Place a slice of toast on a work surface. Place a fried fish finger on the edge of the toast. Draw two lines of mayonnaise in the middle next to the fish finger. Fold the slice of toast together and serve.

I still remember my childhood well, when we often had fish fingers after a long day at the lake. Usually just like that, with mashed potatoes. But sometimes, when my mother was particularly creative, she conjured up these little toast bites for us. They were always a hit! This recipe is a tribute to those carefree days. The basis of this simple snack are of course the fish fingers. They provide the salty, slightly fishy taste and the crispy texture that makes the dish. When buying, make sure you buy a good quality. Frozen fish fingers are perfectly fine, but make sure they come from sustainable fishing. The toast serves as a soft, slightly sweet base and holds everything together. It should not be toasted too dark, otherwise it will break easily when folded. The mayonnaise, preferably homemade or a high-quality one from a jar, provides the necessary creaminess and combines the flavors. Preparation with the Thermomix® is not directly involved, but it can help us with the mayonnaise! If you don't want to use ready-made mayonnaise, you can make it yourself in the Thermomix® in no time at all. Simply put the ingredients (egg yolk, oil, mustard, lemon juice, salt, pepper) into the mixing bowl and emulsify according to the instructions. The result is a fresh, creamy mayonnaise that enhances the taste of the fish toast bites. The fish fingers themselves are classically prepared in the deep fryer to achieve the perfect crispiness. Pay attention to the temperature of the fat (approx. 170°C) and do not fry the fingers for too long, otherwise they will become dry. For a vegetarian version, you can simply replace the fish fingers with vegetable sticks or halloumi sticks. Tofu sticks are also a delicious alternative. There are no limits to your imagination when it comes to the spices. A little curry powder in the mayonnaise provides an exotic note, while a pinch of smoked paprika gives the whole thing a smoky depth. Fresh herbs such as dill or chives also go perfectly with fish and mayonnaise. Serve the fish toast bites as a small snack in between, as finger food at a party or as a side dish to a salad. A fresh coleslaw, pickled cucumbers or a corn and pepper salad go perfectly with it. A simple green salad with a light vinaigrette dressing is also a good choice. The fish toast bites taste best when freshly prepared. If you want to prepare them in advance, you can prepare the fish fingers and the toast separately and put them together shortly before serving. The mayonnaise should be kept in the refrigerator until serving. Leftovers can be stored in the refrigerator, but are no longer as crispy.
